Above that, the pasta we had was in our opinion the worst one we tried during our trip. When we were waiting for our pasta 2 people from outside came into the kitchen which I considered unsanitary. The meat was cut before previously washing the hands and the pancetta was chewy and very fatty, it seemed halfway done for us compared to other carbonaras we had in Sicily.
