A great culinary experience for contemporary Italian fare. A hands on chef owner. First time for horse tartar. A clean neutral meat which ate like beef otherwise. The crema added the necessary fat to round off the palate. The squab with herbs and strawberry vinaigrette was amazing. He layered all the ingredients intentionally to impact the taste. The two chefs explained all the menu in English for us. The atmosphere is comfortable and cozy. Because it's an open kitchen we can watch how dishes are prepared and we liked the honesty and openness. I wish I had a restaurant like this in our town aswell! Resevation in prior to a few days is recommended....

Melt in your mouth perfection, sous vide, grilled on flat top. Zabaglione with almond semifreddo. This was just a fantastic meal. A must when you visit Parma. My favorite table over looking...
