This place was recommended by a hotel clerk, and it was excellent all around. We had the timballino di finocchi e patate allo zafferano e pistacchio; fusilli acqua e farina con vignarola, guanciale, e croccante e pecorino; carbonara; scaloppa di branzino dorato; and the assoluto al pistacchio di Bronte for dessert. Everything was just delicious; the pasta was perfectly al dente, the fish was delicate and perfectly cooked, and the dessert was scrumptious. The fusilli in particular was worth the price of admission: guanciale, peas, and artichokes, a stellar but unusual combination. Our negronis were also perfectly balanced. Service was a tiny bit slow, but very friendly. Great laid-back atmosphere and classic jazz music in the background -- a nice contrast to the places that tend to play bland pop or club music. We ordered an octopus panzanella and the sliced meats/cheese board to start. The prosciutto was soft as butter and the cheese selection was lovely. The panzanella was a daily special and I loved the sweet cherry tomatoes that were mixed in with the octopus, bread and dressing. We ordered two pastas, both super fresh and cooked perfectly al dente. I could have eaten three more bowls of the cacio e pepe. The pistachio salmon special was top notch, as was the pork fillet. We had an expectation for something special that we want to come back to. Appetizers and one main were uneventful, one secondi de carne was good, both deserts were good. We had one white and one red wines. Bottle of red from Lazio was okay, but significantly overpriced, bottle of white was bad.
