The owner Mario is super friendly and takes his time to explain what his best dishes are. The traditional pork sandwich is A MUST. Crunchy bread with pork cooked for 24 hours, the crispy pork skin is a nice surprise on certain bites. The taste combo with the arugula creates a perfect balance on a simple sandwich. I liked the pork so much that I asked the owner to cut me a piece. He served it to me on a plate. OMG, amazingly delicious. The fat flavor melts in your mouth with the lean pork is out of this world. If this place was more Instagramable it would be flooding with people, but when I went there was almost no one because everyone wants to go to the "ristorantes" on the other side of the street just because they look more fancy with the spritz's in the windows. I got a panini with the most fresh ingredients I had in Rome (even more than in much expensive places), and the people next to me were complementing the pasta non-stop. So, if you don't really care for a nice picture for Instagram and actually care about authentic and really fresh and tasty food coming here is mandatory.
