Chestnut lovers should recognise waguri as Japanese chestnut. The products served here in particular come from chestnuts grown in Noto peninsula where the red clay content is known to suit chestnut farming. There is a tablet out front to register on the wait list, as there are only 5 or 6 tables of 2 at a time. Once you are in you head upstairs, bigger groups need to be split into twos and 1s since the tableside completion of your desert is done per table of two. The mont blanc roasted and unroasted are the main two options, the roasted is deeper in flavour in my opinion but the mont blanc profile most would know is the unroasted which is sweeter.
