霧の森菓子工房 松山店 — Restaurant in Matsuyama

我在早上9:30到達餐廳時，已經有不少人開始排隊。大部分排隊的是當地居民，這原本讓我認為這家店的大福非常好吃。事實上，大福的味道真的很棒。特別是抹茶口味的餅皮搭配紅豆內餡，紅豆的質地非常細緻，順滑地滑過喉嚨，而不像一般的粗糙紅豆。但我對於中心的奶油味道有些失望，因為它似乎被紅豆的味道所掩蓋，這有點可惜。

然而，細心觀察後，我發現造成排隊的主要原因是結帳流程存在瓶頸。目前的結帳流程是：一位店員負責操作收銀機，另一位店員則根據手上的點餐單唱名。儘管我聽不懂日語，但這兩位店員之間的協同明顯存在問題。第三位店員，負責取餐的，經常在等待他們完成點名和輸入品項，這顯示瓶頸點確實在收銀環節。我建議餐廳考慮改革結帳方式，例如採用條碼掃描的方式，以提高結帳效率，減少顧客等待時間

Upon my arrival at the restaurant at 9:30 in the morning, there was already a considerable line. Most of those waiting were locals, leading me to believe the restaurant's Daifuku must be quite delightful. Indeed, the taste of the Daifuku was impressive. Especially notable was the matcha-flavored skin paired with the red bean filling. The texture of the red bean was very refined and silky, smoothly gliding down the throat, unlike the typical coarser red bean pastes. However, I was somewhat disappointed as I couldn't quite discern the taste of the cream in the center, possibly overshadowed by the red bean flavor, which was a bit of a pity.

However, upon closer observation, I realized that the primary reason for the queue was a bottleneck in the checkout process. The current system involves one staff member operating the cash register, while another calls out orders based on a list. Although I don't understand Japanese, there was an evident lack of coordination between these two employees. The third staff member, responsible for fetching the orders, was consistently waiting for them to finish their calling and input. This indicated that the bottleneck was indeed at the checkout. I'd suggest that the restaurant consider revamping its checkout method, possibly using barcode scanning to improve efficiency and reduce...

This Mochi is ranked as the 1st dessert in 愛媛 and easily sold out in the morning (especially for one single Mochi). If you ever have a chance to taste it, you will understand why it can be the top ranked dessert among the Japanese Mochi.
