松山近郊への長期出張に伴い、二郎系ラーメンを探して訪れたのがこちら。事前のネット調査によると11:30開店となっていましたが、実際にお店に行くと11:00開店という表記がありました。 二郎のラーメンを横目で見て意識しているのは間違いありませんが、共通項といえばヤサイ、刻みニンニク、背油の増量が可能という点くらいです。ただ、それが決して悪いということは全くなく、自分の好みにはジャストフィット。上記以外にも鰹節もトッピング可能みたいです。 ちなみにデフォルトでもヤサイは入っていますが、いわゆるマシとマシマシに該当するチョイカチとカチがあります。ニンニク、鰹節は標準では入っていません。背油はマシ、マシマシ相当のギタとギタギタ、抜きが選べます。頼んだのはスタンダードな豚骨 ラーメン中盛のチョイカチ、ニンニク、ギタ。 まだ空いていたので直ぐに配膳されたラーメンは、ビジュアルこそ二郎ライクながら、実態は「背油チャッチャ」系のラーメンそのもの。背油の甘みをほのかに感じる乳化したスープはマイルド ですが、僅かに豚骨特有の香りがするので好みが分かれるかもしれません。私も度を越した豚骨の香りが苦手ですが、こちらは全然大丈夫でした。 麺は中太で加水率低めのストレート。パンチのあるスープや背油を持ち上げすぎず、スープに良くフィットしていると思います。 具材のメンマ、ネギは凡庸な印象ですが、チャーシューはバラロールのもので、非常に柔らかく丁寧な仕込みが伝わってきます。 四国の主要都市なので首都圏から訪問する人も一定数居ると思いますが、私の居住エリアである千葉県からアクセスできるお店に例えると、方向軸としては「なりたけ」「弁慶」「平大周」「屯ちん」などが近いかと思います。それに二郎のトッピング要素が組み合わされる世界感はなかなかエモーショナルでした。
