Chef knows her job. Dough is light and crusty, ingredients are of good quality and taste is awesome. Pizzas are cooked in a real Italian wood oven open to be seen by all. She prepares the pizza the old way, meaning that all ingredients are cooked… so the bottom of the pizzas was wet. She should may be change the traditional way by adding some wet ingredients after it has been removed from oven like they do now in France. The pizza was cooked a few feet away from us and was amazingly light and full of flavour. They even managed to rustle up some chips for us to nibble while we waited (not long) for our pizzas.
