I truly enjoyed my noodle experience at Hifumi. The mix of flavors of dried sardines and clear broth of chicken brings perfection! It's light, savory and you can slurp down the bowl of soup as it is not salty and greasy! The noodles are just right, firm and tender! A comforting taste, filling and satisfying!
This is a Chinese style noodle dish but using the local or domestic based ingredients of dried sardines, a clear broth of red chicken and Awa chicken from Kyoto. The homemade noodles is 100% from Hokkaido wheat! The flavor is unique and it tastes different from the usual heavy ramen.
Hifumi is located in the Kitashinchi area, famous for the food and restaurant experience! The area is nice and easy to find, away from the bustle of the city. Just a 12 or 14 minute walk from Higashi- Umeda and JR Osaka station. This noodle shop closes late until 3:30 am.

Read moreI visited Hifumi Ramen near Kitashinchi Station, and honestly — it’s one of the most quietly impressive bowls I’ve had in Osaka. Their clear shoyu broth is made from local dried fish and kombu, with no MSG, and paired with traditional barrel-aged soy sauce from Hyogo.
The thin, firm noodles are made in-house using Hokkaido wheat, with a low hydration ratio for maximum texture and flavor absorption. Low-temp pork shoulder chashu is tender and pink, and the soft-boiled egg has the perfect creamy yolk.
I walked there from Yodoyabashi Station (about 10 mins) and went back via Higashi-Umeda Station — a peaceful and satisfying ramen detour.
