Local joint for tsukemen, which was by far the best tsukemen iv ever had. It's as local as you can get, but thankfully they had an English menu which helped.
There are 3 types of Tsukemen - original, curry, strong. And different options of chasiu (pork slices), bamboo shoots, egg, or the full works.
There is a staff who runs the bowls from kitchen to table, and you order your bowl from a machine that's just to the left of the entrance. You hand the slip of paper (from the machine after payment) to the lady, who will ask if you want regular amount of noodles, or extra - there seems to be no additional charges for this, cos it's asked after you've paid/made your order.
For myself, I ordered the strong bowl with the works, and good god - the noodles had the perfect al dente bite, and the dipping gravy was so rich and flavourful - the base was made of bonito and pork.. There was also bits of pork in the gravy. The meat was tender and had a nice char to it. Condiments included yuzu juice - when added, creates a new dimension of flavour.
The original sauce was just as wonderful, and had its own smokiness.

With my first dip of the noodles into the thick, savory broth, I was greeted with an explosion of flavors. The perfectly cooked noodles absorbed just the right amount of broth, allowing the flavors to meld harmoniously. The broth itself boasted a complex blend of soy sauce, tonkotsu, and various aromatic spices, creating a symphony of taste that complemented the...

Tsukemen dipping broth - what makes it so good is really the char/wokhei-equivalents from the soup’s ingredients Tsukemen - excellent al dente texture, which complemented the flavourful thick umami broth
Hanjuku egg’s egg white+yolk were a bit more plain than other shops but I found it more appropriate in the context of a concentrated dipping broth
Highly recommended to get the full set (add everything) 💯 - can try thicker broth if preferring stronger char flavours, but honestly standard is alr good
Even though most things are not in English, Cheers to the friendly waitress! You know you can’t go v wrong with a shop that a decent amount of locals...
