The word "excelence" is repeated by other reviews and for good reason--the food, service, and atmosphere are all excellent. We ate at another restaurant when we first arrived, and it was good, but then we found Cauldra and we only ate there for the rest of our stay and brought back home a big selection of their breads. Oh my goodness--their breads. Heaven. I especially loved their calzone. And their meals--world class.
By the way, this is a dedicated gluten-free restaurant. In fact, they somehow make these delicious foods without using wheat, dairy products, eggs, shrimp, crab, soba, peanuts, or walnuts. But, your family and friends who are able to eat those foods won't miss them--the food is that good.
The owners are humble, they say that their snacks are not glamorous or sophisticated--don't believe them. Their culinary creations are fabulous. While we live in Japan, getting to Sapporo regularly is not an option so I am so glad they offer online ordering in-country (using stores.jp to ship frozen).
If you visit Sapporo, and even if you do not have food allergies, I strongly suggest you check Cualdra out. By the way, they have an English version of their menu....

However, I have to be honest. The food is actually not amazing.
They could be better, but it feels like the innovation has died couple years ago after they found their audience. It feels like they haven't improved their menu for couple years.
I mean, where else would allergy sensitive people would go? The only part that's amazing is the allergy awareness of this place.
For instance, the pork...it's a bit dried. I was hoping it would like melt in my mouth but it did not. There are surely couple ways to do so - which requires better prep.
And they have some kind of ventilation problem because after sitting here, I left smelling like fried oil (the smell was all over my coat and my clothes).
A drink for 800 yen is definitely over priced. Maybe the idea is for people to pay 1000 yen dessert and drink which I understand.
The desserts were good, but maybe not as good as dessert specialized place.

Being gluten-free in Japan is not easy, but not only does Cauldra offer one of the few all-gluten-free menus in the city, their baked goods are some of the best I’ve ever had! And I’ve had a LOT! I wish they would sell mixes for their bread bc I would buy them out.
To illustrate how delicious their baked goods are: I walked almost two miles to their shop, in 80°+ weather last week, before leaving for Tokyo, so that I could be rest assured that I would have delicious gluten-free options until I found Cauldra’s equal in Tokyo. Spoiler alert: I never did.
