If you are looking to sample the highest quality fish in Hokkaido, this is the sushi restaurant for you. The omakase menu has no unnecessary bells and whistles - the sushi is fully focused on extracting the best flavor from the main ingredient - the seafood. The sushi rice was perfectly seasoned and just the right temperature to complement the fish. The chef also applied the correct amount of wasabi and soy sauce for each bite. Finally, the seafood selected for each bite was the highest quality I've tasted (I'm not trying to claim that this is the best sushi in Japan - that would be bold). There were no additional toppings other than that on any bite. No sauce, or vegetables (other than nori on the gunkan maki). Just know that going in, and focus on the deliciousness of the fish (or squid, eel, ikura, etc.) My wife and I are together, and both of our favorite bites was the chuutoro.
