Excellent service and interesting cuisine. We came with an open mind, curious to try this interpretation of Vietnamese flavors as a person of Vietnamese descent. We reserved the dinner course. The staff member who attended to us was very friendly. He was kind in describing the dishes to us in English-- an effort we appreciated and we're not expecting! He also chatted with us. :)
The dinner course, itself, is tasty and interesting but honestly did not remind me much at all of Vietnamese flavors, except for the interpretation of banh mi, although I understand the menu changes. Herbs are very strong in flavor, perhaps even heavy handed. One dish, a type of spring roll, had the appearance generally reminiscent of a vietnamese spring roll but the flavor profile was very different. Still, we really enjoyed this meal.
Others have commented on the restaurant size. At the time of our meal, we were seated at the counter with two other people. This was sufficient space for us, but it would be tight with more guests at the counter.
Overall, I would say that if you're very interested in experiencing noticeably Vietnamese flavors, the dinner course may miss the mark for you, even with an open mind. Noted that they offer innovative dishes with a touch of 🇻🇳 influence, rather than traditional Vietnamese cuisine. While nothing was bad, nothing stood out as exceptional. The overall course fell short of my expectations, with the grilled pork being the only highlight. For most of the dishes the flavors didn't blend well, particularly in the snapper dish where some sauces/ingredients felt a bit off🥲 The dessert was also disappointing in taste 😮💨
Overall , the lack of standout dishes and unimpressive flavor combinations can make the course's value for money...

I would say even its not worth JPY 500 for this because there are other great authentic Vietnamese restaurant in Tokyo that charges JPY 950 for great authentic pho....Also, waitress was really rude!
