175°DENO担担麺 TOKYO (東京都新宿区西新宿/最寄駅:新宿西口)

都営地下鉄・大江戸線 新宿西口駅D5出口から徒歩3分、西新宿の小滝橋通り沿いで2018年2月にオープンした担々麺専門店「175°DENO担担麺 TOKYO」。

本店は北海道・札幌で2013年の創業し、札幌市民の間で絶大な人気を誇る坦々麺の名店。2010年初頭から汁なし坦々麺ブームが全国的に広がったが、札幌における汁なし坦々麺ブームを牽引してきたお店。

現在は札幌市内に5店舗と隣の江別市に1店舗の他、東京都内に2店舗(銀座、新宿)、福島県にも1店舗を展開している。

2015年に札幌の本店に初めて行って、その後も2017年に札幌北口店、2020年に札幌駅南口店と札幌に行くたびに食べたことがあったが、都内の店舗は今回初めて。

お店の入口にタッチディスプレイ式の券売機。メニューは看板商品の汁なし担担麺(1000円)、汁あり担担麺(1000円)の他、二郎系担担麺「一七五郎」(1300円)や激辛担担麺(1250円)がある。

「シビれ」と「辛さ」はお好みでカスタマイズ可能。それぞれ0~5段階あり、シビれ・辛さともレベル3以降は有料。

⚫︎汁なし担担麺 1000円 汁なし担々麺はもちもちした特注の平打ち麺にゴマダレとラー油が良く絡み、やみつきになる味わい。タレは白胡麻ペーストと鶏ガラスープのまろかやさに、ほどよく酢の酸味もある。トッピングは炒醤肉(ザージャンルー=肉味噌)と蝦米(シャーミー=干し海老)、カシューナッツ、水菜とそれぞれの味や食感の構成が非常にバランスが良い。

店主自らが四川省の山奥で直接買い付ける香辛料を使用した自家製のラー油は、辛味、酸味、苦みなどが調和するよう調合され、素材の風味を引き出すよう低温でじっくり香りを移している。店名の175°は辣油を作る際の油の温度だそう。カシューナッツの香ばしさに加え、自家製調味料で炒めた挽肉は噛むと旨味が口に広がる。

昔からメジャーだった汁あり担々麺と比べて、汁なし担々麺は四川中華料理店の裏メニュー的な扱いだったが、2007年に都内で「阿吽」(湯島)や「辣椒漢」(小川町)、「双六」(戸田公園※2018年に閉店)といった専門店が相次いでオープンしたことで一大ブームを巻き起こす。

特に「阿吽」の汁なし坦々麺は、芝麻醤(白ごまペースト)ベースのタレに太麺をからませ、肉味噌、干し海老、ナッツ、水菜、パクチーなどをトッピングするスタイルで、本場成都式とは異なる日本人の舌に合わせた日式汁なし坦々麺の象徴とも言われ、その後多くの店に影響を与えた。こちらのお店も「阿吽」のスタイルがルーツとなっている。
