🍜 特製中華そば / tokusei chuukasoba 🇯🇵 中華そば 勝本 / chuukasoba katsumoto / suidobashi, tokyo 🗓️ 01/2023

Chuukasoba Katsumoto is the first ramen shop by chef Matsumura, who also runs Kanda Katsumoto and Ginza Hachigo. It serves some classic, old-school bowls of shoyu ramen. The execution of this simple offering was quite nice. I love the subtle hint of niboshi on each slurp. On this visit, I was actually planning to try the more intense niboshi that they have but the buttons were greyed out on the ticket machine. I don't see people posting pictures about that bowl anymore so maybe it was already discontinued. The chashu here were on the drier side of things so I did regret a bit going for the tokusei and the chashu bowl. Other than those, nothing really stood out imo but it's a decent option if you are...

Katsumoto is one of the cleanest looking ramen shop in Tokyo. Its got a very zen feel and everything from the menu to its little philosophical book on its ingredients is so well thought of.

Ramen stock tasted a little too fishy for me. Get the shoyu one if you dont want the soup to taste over powering. I had the tonkotsu version and it brought our the sardine taste. Noodles were curly and texture was just right. The dried seaweed was really fragrant. Pork was lightly smoked from the grill which tasted really good with the noodles.

I'm not a fan of bamboo. So I didnt add any in mine.

Its a short walk from the train station and its not too hard to find.

The Tokyo Dome is 7 minutes walk away. So go there for some crepes, more ramen or take the...

After 16 days in Japan we came back to this place because it is the best Raman in Japan that we encountered. It's clean and clear that every bowl is important to them. It has that simplicity hidden behind a magnificent broth that makes the end of the bowl a tragedy. Buy your ticket, take your seat, install your Bib and wait while you watch them measure out the perfect portions to make your bowl the most important bowl made all day. The eggs are unbelievable. The perfect condition between soft and hard boiled and melt in your mouth. Belive it...go here...leave and wonder how this place doesn't make any "best" lists....

In a city known for good ramen places, Ramen Katsumoto excels in being one of the best. Good broth and fresh ingredients prepared by the most expert hands. This is a must try for everyone. Tip for the visitor: you come in, turn to the right and find the machine you order through. Place the money and push the button of your desired dish and add ons. Egg is good, tho most ramen come with egg already. There is an english menu for those who need it. I will surely come again. Thank you Chef.
