I ordered the 味玉チャーシュー味噌ラーメン (Ajitama Chashu Miso Ramen), and it was absolutely outstanding. The broth was the star of the meal, rich, flavorful, and perfectly balanced. It had depth, warmth, and the ideal consistency that defines a truly great ramen. I’ve eaten many ramen in my life, but this broth was among the best I’ve ever tasted.
The noodles were cooked perfectly, the chashu pork was tender and full of flavor, the egg was perfectly seasoned, and the bean sprouts added a refreshing touch. Everything came together harmoniously, but the broth elevated it to something exceptional.
The ambiance was cozy and traditional, with counter seating that gave it a genuine ramen shop feel. The staff were friendly, attentive, and clearly passionate about what they do. Ordering is done through a vending machine, and although there can be a short wait, it’s completely worth it. The vending machine is in Japanese thats maybe a little problem, but you’ll be figure it out. I don’t think it matters what you’ll order it will be good.
The portion size is slightly small, but the flavor more than compensates. This shop easily belongs among the top three ramen spots in Ikebukuro, and it’s absolutely worth a visit for anyone who loves authentic, perfectly...

Honestly, I don't see many high-tier ramen entries in Ikebukuro. When Tasakaya made its name heard in the ramen world by positioning itself near the top of the miso category on ramendb, I bet many ramenheads put this shop on their lists. Tasakaya also went ahead and won 2nd place for miso on the TRY ranking last year. Unlike other miso ramen shops, Tasakaya has a unique approach when preparing their bowls. They render seabura, pork back fat, in small batches with their white miso tare and then combine it with the typical Tokyo-style pork and chicken base broth. The bean sprouts are still wok-seared with lard to give the bowl that aromatic, charred flavor. This was one of the rare occasions that I really enjoyed a spicy miso bowl. I believe the noodles were brought in by Shinjuku Daruma from the boxes behind the counter seats. These thick and dense noodles worked incredibly well with this impactful broth. Small shop so expect to queue during peak time. There was minimal queue when I went as it was 30 min before closing.
Order is as usual via vending machines. Water cups are served next to vending machines.
The bowl was definitely large and this is a comfort and hearty food. They had fried the bean sproutd and it offers a nice wok smell to the ramen. Char siu was tender, egg was excellent too.
While it may seem slightly salty at first, it really goes down well as you eat it! A lot of Japanese would get a extra bowl of rice to soak up the soup!
Last note, knew them via Try (ramen magazine) as one of a new shops for miso! If you are near ikebukero and want a nice supper during a cold night, this is definitely a good one....
