① Taste [50/50]
Rice (10/10): The combination of red and white sushi rice was outstanding. Red rice was used for ingredients with stronger acidity or richer flavors, while white rice was used for lighter-tasting ingredients such as white fish and silver-skinned fish. Every bite was incredibly delicious.
Toppings (10/10): The pairing of the toppings with the sushi was excellent. The aburi (seared) selections were particularly outstanding, such as the seared nodoguro (blackthroat seaperch) paired with grated daikon radish and the sawara (Spanish mackerel) topped with ground sansho pepper, which was a perfect match.
Soy Sauce (10/10): The soy sauce was well-balanced and complemented every piece of sushi perfectly. The delicious soy sauce enhanced the flavors of the toppings, and vice versa, making for a perfectly harmonious combination.
Other Flavors (10/10): The clam soup and white fish clear soup were so flavorful that it felt like a waste to leave even a drop behind. The grilled cod was light yet delicious.
Balance (10/10): The quality of the sushi matched the price perfectly, and every piece was exceptional. This was truly the essence of a sushi master's craft. It would not be an exaggeration to say that Makoto-san's sushi is among the best in the world.
② Interior [30/30]
Comfort (10/10): The restaurant accommodates a maximum of seven guests. Although it may seem small, the space feels open and comfortable. There is ample space behind the seats, making it easy for customers to move around or go to the restroom without hassle. From a chef’s perspective, having a larger kitchen might be preferable, but from a customer’s point of view, the comfort level was excellent.
Atmosphere (10/10): The ambiance inside the restaurant was lively and enjoyable, thanks to the entertaining conversations of the head chef, Makoto-san. The proprietress was also highly attentive, making the experience extremely pleasant.
Exterior (10/10): The entrance, with its noren curtain and door, exuded the essence of a high-end sushi restaurant. The interior ambiance perfectly matched the exterior, creating a cohesive and refined experience. Located in Yotsuya, the restaurant also offers excellent accessibility.
③ Service [20/20]
Service (20/20): The attentiveness of the proprietress was impeccable, and the speed at which empty plates were cleared demonstrated top-tier service. The special Chirashi don is only available for lunch on Tuesday, Thursday and Saturday as we know. Each day this is available there is a limited number of sets. Best to call ahead.
