\t塩パンを造る上で欠かせない素材が美味しいバターの存在です。多くのお客様もご存じの通り、白トリュフの塩パンも、イタリアから取り寄せる香り高いトリュフを使って造る「美味しい自家製トリュフバター」が完成した事が始まりだったのです。当然ながら生地においてもトリュフに負けないベーカリーだからこそ、生地造りも入念に行って参りました。大変な仕事ではありながらも造り続けてきたからこそ、いまでこそ沢山のお客様にご提供させて頂ける商品へと成長してきたと考えております。そんな本日ではありますが、私達TruffleBAKERYが次に選んだ素材が海藻です。海藻と言っても元々ヨーロッパの専門食材を取り扱う私達だからこそ実現出来た、フランスはブルターニュ産「ダルス」の直輸入。海藻(ダルス)を取り寄せて始まったバター造りと、海藻バターの塩パン造り。
白トリュフの塩パン
このパンを開発する上での開発目標は、トリュフを使用するならば、普段触れる事がない高級食材を、そしてその中でも特に希少品種でもある白トリュフを使う。更に身近なパンとソリューションさせる。凄く贅沢しなくてもいい、でもほんの少しだけ豊かな気持ちを体験出来るパンを開発する。白トリュフの塩パンを開発する上で最初に決めた意義目的はここです。そして実際の開発に進んだ訳ですが、まず、白トリュフに負けないパン(生地)造りから始まりました。※アルバ産のフリーズドライにした最高級の白トリュフを使用。小麦粉の選定、勿論良い小麦を使用すれば美味しいパンになる!訳ではなく、とは言え良質の小麦を選定するわけですが、何よりも重要視している点が、パンが出来上がるまでに発生する幾つもの工程を経て焼き上がるのですが、全の工程を90点以上出しながら組み立てて完成致します。この工程の積み上げがあってこそ、選定した美味しい小麦粉が最大限いきて来るし、ただ高級食材を使うだけでなく、本質的なパン造りへの飽くなき探求心から生まれた逸品です。白トリュフの塩パンはカナダ産の一等粉を使用する。パンにはマーガリン、コンパウンドを一切使用せず100%フレッシュバターのみで製造する。また、パンの中には自家製オリジナルトリュフバターを巻き込む。仕上げにトリュフオイルにアルバ産の白トリュフとフランス産のエキストラファインソルト使用、パンの設計上3箇所にトリュフを使用し、独自に開発したオリジナル生地を使う事で、表面はカリッと白トリュフが香り、中はバターと心地よいトリュフの香りに引きと弾力のあるパンとして焼き上げております。
黒トリュフの卵サンド
ヨーロッパでトリュフと最も相性の良い食材としてあげられる卵!イタリアのサヴィーニョという街では卵を練り込んだ手打ちパスタに、味付けはカチョエペッペ(オイル・胡椒・塩・チーズ)と同じようなシンプルに味を付けを行ったパスタにふんだんにトリュフを削り食べる料理があるほどです。黒トリュフサンドの開発目標は、トリュフを最も美味しい食べ方提案で使用する事が前提で開発されております。そしてTruffleBAKERYが考えた商品は、日本人にとって大変馴染みのある「たまごサンド」、馴染みのないトリュフを掛け合わせて創り出されました。更にこのエッグサンドを支える土台ともなるパンは、このサンドイッチの為だけに開発を行い、毎日焼き上げ挟みご提供させて頂きます。

Went to this spot because it is said they have nice bread & pastries that are truffle infused.

They have many truffle infused offerings & because we were going to have a lunch soon we decided to just get a taste of what this place does for future reference Just got one thing, The truffle salt bread.

This features homemade truffle butter wrapped in a soft bun made from Canadian flour and is topped off with truffle oil and truffle salt.

"Meh" I thought, how good can it be.. I mean really!

It looks ok, then you take a bite & it is buttery perfection with great flavours of truffle coming through. I have had truffle oil before many times. Usually taste the oil first then the slightest hint of truffle since most producers of truffle oil make this as a way of value adding the odds & ends of their truffle harvest. This flavour of truffle is at the forefront of the pallette, is not overwhelming but well balanced & no hint of the oil itself. This is not a croissant, it's a bread for goodness sake!

We will be back for at least the EGG SANDWICH & a dozen other pastry offerings!!

PS just be prepared that there will be queues. Like everything popular in Japan, queues could/ will...

I had the pleasure of visiting this bakery recently and it's no wonder there's always a long line outside. From the moment I stepped through the door, I knew I was in for a treat. The selection of pastries, croissants, sandwiches, and baked breads is simply outstanding.

I got off at Hiroo Station ONLY FOR VISITING Truffle BAKERY. The smell of bread wafted before I even got out of the station, and it was truly magical. I visited at 6pm on a weekday, and there was a line outside the store, and it took about 15-20 minutes to make the final payment. I was traveling alone, so I only bought Salt Bread. (Note that the photo is not of salt bread!) When I returned to the hotel and ate it, I really regretted not buying other menu items. Even if you are traveling alone, if you can’t go to Tokyo once a week, you should definitely buy various menu items! I love bread, so I’ve tried various breads not only usual but also while traveling, but this is the most delicious salt bread I’ve ever had. It’s incredibly delicious. The outside is crispy, but the inside is moist and chewy. It’s so delicious! I ate one the day I bought it and the rest the next day, and it was just as delicious the next day. I highly recommend it!
