I am always looking for new places to eat, in particular, something that will 'wow' me and my taste buds. I booked Chambao after reading reviews and seeing videos on tiktok. It looked like a full evening experience complete with food, entertainment and ambiance. The location itself is beautifully done. The restaurant is mostly located outdoors and it's surrounded with water features, plants and dimly lit candles. There was ample staff prepared for the evening. We started with a bottle of moscato which was sweet and delicious. Our waiter brought a basket of bread and 3 different butters to accompany the breads. One of the breads was a soft bread with a pretzel-like top there was a couple slices of sourdough and a soft croissant roll. All of the butters (garlic, citrus, pepper) complimented the breads very nicely.
Next, we ordered a Pear salad. This was my favorite part of the meal. It was big enough to be my main course. The big leafy creams were topped with candied pecans, sliced pear, drizzled in a beet dressing and sprinkled with goat cheese and cranberries. It was fresh, light and flavorful.
For dinner we ordered the filet and Senegal Shrimp. The shrimp was huge and well seasoned but it was over cooked so it was rubbery and tough to chew. The filet was cooked medium well but wasn't anything special for the price.
For sides we ordered a baked potato and the four cheese risotto. The risotto was slightly over cooked and even a little tough. It was very cheesy but because the risotto was over cooked the entire dish fell short. The baked potato was a full potato, uncut and smothered in sour cream. I haven't seen anything like it. Luckily, we had enough left over butter from the bread so I cut up the potato and used the butter to add some flavor, but I also had to ask for salt.
For dessert we ordered the Flan and Magma Cake. Being that we're in Mexico I expected the flan to be on point. It was a very big slice of flan but there was not a lot of flavor. I think I had 2 bites and then ate the berries. The Magma Cake boasted flavors of caramel, pecan, chocolate and Oreos. It was bland and I mostly ate the vanilla ice cream. I thought each of these desserts was going to be creamy and decadent but the flavors just weren't there.
We enjoyed the hookah portion of the evening. They offered great flavor combinations.
The entertainment was cool but entertainment didn't kick off until about 8:30 so I'd recommend making a later reservation to catch more of the show.
There was a lot going on at Chambao and I was hoping for a better experience for the price. We paid $500 for 2 people. There were a lot of areas for improvement: food flavor, the table we had was way too small to accommodate what we ordered, the staff seemed new. We bought water and needed a replacement glass because there was a chip in one of the glasses. They replaced the glass but took the water that was poured in the glass. They took our bread and salad before we were done because the main course arrived and there wasn't enough room on the table. They had plenty of staff but we had to ask for items several times.
If this place could improve it would make for a fantastic evening. For the price it was not worth it...

But even if you're footing the bill, with the right person by your side, it becomes less about the price tag and more about the memory. One of those nights you'll talk about long after the last course has been cleared.

Despite all the showmanship of the tableside presentations and stylish presentation of the plates, the food was lacking.
The servers were very pushy, making us feel very rushed, only recommending the most expensive items on the menu. We were trying to get drinks and appetizers ordered and they were already pressing for our main dishes.
The waygu tartar and the oysters were the stand out dishes to us. The tartar was very flavorful and the oysters were fresh and came with a delicious sauce. The Caesar salad was salty and very basic with huge chunks of lettuce, we had a hard time eating the salad without cutting it. The shirt rib tacos were tender but flavor was lacking. The rosemary French fries were crispy on the outside and creamy on the inside but came out lukewarm. The oly thing that came out piping hot was the arachera steak because it was on a sizzling skillet, but sadly it was over cooked and over salted.
