Santos Fuegos is one of those spots that one wants to keep to themselves, as it's that good. That simply would be a disservice to future diners, Rodrigo, the shy and gentle chef along with the entire delightful, attentive and knowledgeable team who delivers food beyond description with impeccable service. Rodrigo creates art with each dish. I have been on the island for a month and will have been to SF 6-times. The food is beyond fresh and the menu changes daily based on the ingredients available on the island. It's farm-to-table at its finest (known as campestre here). Rodrigo and team curate and create magic each night. Whether it's broccoli with honey, carrots and papaya, roasted chicken so flavorful, you'll go back the next night or the perfectly flavored + prepared whole fish or eggplant, every decision is the right one. Each item is its own lesson in perfection. Get the elote dessert when on the menu. It's signature to SF and Holbox. The vibe of SF is it's own entity. It's located between town & Punta Cocos. It's island chic with low-lights, complementary music and calm energy that matches the unfussy yet fab vibe of Holbox. Pro tip: Make a reservation in advance.

Restaurant specializing in fire-grilled delicacies. Menu on chalkboard. Portions are fairly large (good for sharing and coming with friends). - Basil salad: one of the best jicama salad I have had 😋 the sauce is a perfect balance of spice and savoriness. I can have this everyday. - Caramelized carrot: tasty but too sweet for my liking (more like a dessert than a starter in my opinion) - Fish of the day: tender meat paired thoughtfully with the sauce and plantain. - Rotisserie chicken: sauce was a bit too sweet for me (reminded me of an Asian sweet soy) but otherwise the chicken was juicy and skin nicely crisped - Vacio Prime: the steak was beautifully charred on the exterior, giving it an additional layer of flavor. Sadly the chimichurri sauce and salad dressing were a bit too sweet for my liking. - Corn bread: amazing dessert (and gluten free!) served like a tamale. Overall highly recommended! We came here twice during our 5-day stay 😋 the service is very friendly (special shout out to the gentleman who helped us navigate the gluten-free items on the menu) 🙏🏻

Santos Fuegos is rightfully lauded for their food in these reviews, and I have nothing but love for the dishes Melisa and I shared for dinner: blue corn tart amuse bouche, slow roasted empanada, broccoli (such an amazing balanced dish), charred prawns (pre-split and an easy eat), easily could have ordered 2 more of this dish, but with great restraint we chose to enjoy the cornbread with ice cream to finish. The food alone doesn’t do the place justice. Julie was our host for dinner and was a great part of the experience for a memorable highlight of our trip to Holbox. Everything about their approach is a reflection of hospitality at the highest levels, levels we continue to talk about when reflecting on our most memorable meals. Well done Santos Fuegos

The food! The service! Everything! Our incredible server, Andrea, provided a detailed description of every dish on the menu and gave perfect recommendations for appetizers, entrees and cocktails. The attention to service is the best we have experienced in a long time. The entire staff made sure we were happy & hydrated. The food is outstanding! Everything we tasted was prepared and presented to absolute perfection. Flatbread was super flavorful and loaded with juicy brisket. The short rib was honestly the BEST I have every tasted. If short ribs are on a menu, I order them, so I've tried many but none as good as Santos Fuego. I may go back tomorrow to ask for a container of their chimmy churry. My partner had the fish...he picked every morsel because the did not want to waste one drop. It was moist and smokey. I tried the sweet potatoes that accompanied his fish. I don't know how they cook them so crisp on the outside and creamy smooth on the inside. Just amazing. At the recommendation of a friend, we ordered the roasted carrots. I don't have the words to describe how delicious they were. I would make a whole meal of those carrots! The cocktails were made with (noticably) high quality liquors. If you visit, I highly recommend the Holbox Mule. Delicious and refreshing! Their Golden Margaritas are spectacular too! We struggled to recall another time or place where we had received such amazing service and incredible...

Our meals were well beyond our expectations! The ingredients were fresh and perfectly prepared. The flavors combined in a way that surprised us and it was a such pleasure to try new foods. The presentation made our mouths water. We enjoyed the brisket flatbread, the short ribs, the broccoli, the green salad and the chocolate ganache dessert. Portions allow for sharing. We visited twice during our week long stay on Holbox and probably would have visited once more had we discovered it earlier in our trip! The atmosphere was perfectly rugged and simplistic but comfortable with appropriate mood music playing, The cocktails we tried were as delectable as the food. My wife is a detail person and loved all of the small details in the surroundings and the decor. The only issue were the pesky bugs. They knew good food when they smelled it. Repellent was offered and lovely incense was burning as well. It was recommended to come later in the evening as this is less of an issue. If you are like us and eat earlier, apply repellent prior to your visit and you will be just fine. Once you start eating you will forget about them anyway! Shout out to Gabriel for his wonderful menu presentation and conversation! And to Ulysses for telling us about this...
