For Mexico City, which has almost no authentic Chinese food, it is a step in the right direction.
However: it is half authentic. The noodles are Italian spaghetti, not even factory made Chinese noodles, and they’re certainly not hand pulled.
That said, the soups are 70% there, the chili oil is correct, and the sides like cucumbers are correct.
I felt the flavor in the Xinjiang food wasn’t really authentic. The meat wasn’t the same as in China, more like the meat you’d get from a fast food Chinese place, there was zero cumin, and the flavor was a bit watery.
The soups are decent but not all the way there. The soup taste is mostly correct, but again, the meat choice is a bit poor.
Overall though, it is at least kind of trying, and an island of kind of genuine Chinese food in a sea of food with zero vegetables and ten thousand...
