If you’re visiting Cancún or the Riviera Maya and are looking for a truly unique culinary experience, Ha’ at Hotel Xcaret México is absolutely unmissable. We had the 9-course tasting menu with wine pairings, and every single dish was an experience in itself — both visually stunning and full of rich, surprising flavors.
Each course felt like a carefully curated piece of art, blending Mexican tradition with modern culinary techniques. It wasn’t just about eating — it was about storytelling, discovery, and delighting the senses.
What made our experience even more exceptional was the service. Josué and Edsun guided us through the entire evening, explaining each dish and wine pairing with incredible knowledge and passion. They also shared the inspiring story of Chef Carlos Gaytán, the first Mexican chef to earn a Michelin star, and how his vision is reflected in every aspect of Ha’.
From the ambiance to the service to the unforgettable flavors, Ha’ was hands down one of the best dining experiences we’ve ever had. Read moreFood, service, and ambience was definitely a 5 star experience. Varied and seasonal tastes using local ingredients and french techniques. The amuse bouche at the beginning of the meal were surprising and exciting. Main courses were excellent. Alcohol pairing was hit and miss. The Mexican and Californian wines were a bit underwhelming. The tequila and Italian wine were excellent. I felt that the more Mexican inspired dishes were the stronger ones, the more French dishes were good, but not quite to the same elevated level. I think that a more varied alcohol pairing featuring wine, beer, and cocktails would better suit the Mexican theme of the menu. An on-site sommelier would probably be able to pair the food and drink better. The final chef's gift bon bons were very good, the truffle flavored chocolate truffle was legitimately one of the best bites I've had in a while.
Xcaret the hotel needs to work on the outside guest experience since we were not staying there and it was a bit of an ordeal to get to the restaurant. Read moreI had an incredibly disappointing experience at Ha and I feel absolutely compelled to share it with others. I had been looking forward to dining at this Michelin-starred establishment for weeks, but my excitement quickly turned to frustration when I arrived to find that the address on their website was completely wrong.
I arrived late due to this issue, and when I explained the situation to the manager, I was met with complete indifference. Not only did the manager refuse to acknowledge the mistake on their part, but there was also no empathy or attempt to offer any sort of resolution. Instead of addressing the problem professionally, I was simply told that there was nothing they could do.
It’s one thing to be a little late for a reservation, but it’s entirely another when you show no understanding of a situation that was entirely out of the customer's control. For a Michelin-starred restaurant, the lack of customer service and basic empathy was beyond disappointing. I expected better from such a reputed place.
