Allow me to explain: Chef David is the star behind the dishes. While his kitchen is obviously not equipped with all the molecular gastronomy wizardry, as HA'... it's BETTER. Why? Because Chef David comes out, greets his patrons, is interested in their feedback & is INCREDIBLY dedicated to detail. He goes out of his way to cater his creativity towards your palet. If you had a memory of something from a year ago, where a specific dish was mentioned, or an ingredient or theme.. whatever it might have been.. David will take note & on the night of you following reservation, chances are you will be amazed in the greatest of ways. His cooking style is right up there with any of the greats I have dined at, no matter whether it is Spiaggia & Trio in Chicago, HA' in Mexico or Kunststuben in Switzerland. However, I placed him and his restaurant above the previously mentioned... why? Because Not only is he putting out flavors and creativity on par with them, but he and his staff offer personal magic not seen at the "top." Chefs tend to become self-absorbed once they hit a certain level. Yet here you have an amazing chef who takes such pride in his work that he comes out periodically to meet his patrons & listen to what they have to say. All while having his staff dialed in so well that he is able to do so for a few moments at a time without fear of disaster striking. His creations are elegant, flavors bursting, nothing overdone, nothing oversized & everything executed with perfection. Now, one must understand that his kitchen is limited in resources, but where it (equipment/resources) lacks, he & his kitchen staff shine through & make up for it 10 fold. As for the wait staff, they are fantastic, Especially Edson, who, in my opinion, is the greatest on the floor asset in David's restaurant. From Tomahawk steaks grilled to order to Alaskan king crab legs to fresh tuna sashimi come all of the best was on display. The desert section was amazing and the variety of everything in between was enough to make you fall before you even started eating!
