Great place with great guests! Saturday 22.06 was a holiday in Croatia, so my friend and I decided to go to Ljubljana: gemišt by the river at the wonderful Ljubljana market, a visit to the Cukrarna gallery and some nice lunch. That was the plan! And as it usually happens with Ljubljana, everything went as we expected For lunch, we chose Georgie's brisket, based on a friend's recommendation. We came a minute after opening. Even though we were the first guests, the restaurant already had a relaxed and pleasant atmosphere. The interior is sophisticated and modern, but at the same time extremely pleasant and relaxing. Just like the staff Soon, the restaurant was comfortably full, but along with the good music, the murmur of the guests also contributed to the atmosphere. The dishes were sensational, beef cheeks and lamb fillet perfectly tender, juicy in combination with vegetables perfectly balanced, and the goat's milk panna cotta dessert with strawberries in sauce and basil ice cream was a small work of art. We accompanied everything with excellent Klabjan's unobtrusive, but beautifully fresh and aromatic refoška. Bistro Georgie delighted us with its atmosphere, service and food, but what made it truly special and why it will not only remain a great restaurant where we ate well but will become our place in Ljubljana are its regular guests. An excellent professional restaurant is distinguished from a fantastic place you love by its regular guests. We were lucky enough to sit next to such a nice family. A young couple with an adorable little girl having lunch with their grandparents had a hearty conversation with us and to top it all off they treated us to two fantastic cocktails that Georgi's cocktail master expertly and expertly prepares. When the guests love and appreciate the restaurant so much and when they want to make it special for new, "random" guests, then you know you're in the right place. The textures, flavors, level of expertise and detail was extremely high. And very surprising combinations and substitutions. The prices are really reasonable and well worth it!
For instance, instead of pasta with the Cacio Pepe, they used Turnip and local cheese. It really tastes like the real deal I had in Rome more than 10yrs ago 🤩
With cheeks I prefer normally pork cheeks, then veal and last beef. They usually have more flavor, are more tender etc. I normally even never try beef cheeks anymore, cause they have disappointed me every time, with boring flavors, (although beef stews like Rendang or Flemish beef can be amazing too), but these were top notch 💪🏻
The wines, the couch, the service, everything was on point. Except 2 minor things. The lighting from the kitchen is a bit too much The choice of music didn’t fit the scenery and food. It also was bit too loud and the bad acoustics didn’t help either. Maybe they want to be new and trendy, and I normally love the rock music they played, but it really surprised us.
