I recently visited 濟州 熟成到 本店, and I must say it was an incredible dining experience! The restaurant specializes in dry-aged pork, and you can tell they take their craft seriously. From the moment we walked in, the staff greeted us with warm smiles and made us feel right at home. What stood out the most was how friendly and attentive they were throughout the meal. They not only helped us cook the meat on the table grill but also guided us on the best way to enjoy each cut—such a thoughtful touch!
The dry-aged pork itself was absolutely delicious. The texture was tender with a rich, concentrated flavor that you can only get from proper aging. The meat had a beautiful balance of fat and lean cuts, and when grilled, it developed a perfect caramelized crust while staying juicy inside. They served it with fresh greens, pickled garlic, and other banchan (side dishes) that complemented the pork wonderfully. The king oyster mushroom with Korean branding on it added a fun and flavorful element to the meal. We also enjoyed a hearty bowl of spicy stew that rounded out the experience beautifully.
The only downside was that their signature 960-day dry-aged pork, which I was really looking forward to, was sold out for the day. It was a bit disappointing, but I can’t fault them too much since it’s clearly a popular item. I’d recommend calling ahead to check availability if you’re set on trying it. Read moreI recently dined at 숙성도 and had high expectations given its reputation for serving Jeju’s famed black pork. I ordered both the premium black pork and the cross-aged black pork, hoping for a flavorful, memorable experience. Unfortunately, the meal fell short on multiple fronts.
The meat, while visually appealing, was surprisingly underwhelming in taste. It lacked the rich depth and succulence that good black pork typically offers. The texture was fine, but the flavor didn’t stand out, even with the so-called “aged” variant.
Equally disappointing were the condiments. Normally, thoughtful banchan and sauces elevate grilled pork, but here, they added little to no enhancement. In fact, they seemed more like an afterthought than carefully curated accompaniments.
The complimentary kimchi stew, which is usually a comfort staple at Korean BBQ spots, also failed to impress. It was bland and forgettable, lacking the robust tang or umami that makes a good kimchi jjigae satisfying.

Unfortunately, the second order was subpar, consisting mostly of fat with barely any lean meat. Before we could raise the issue, the meat was already on the grill and cooked. When we tried to explain the disparity to a waiter, he couldn't understand English and brought someone who could, along with a senior staff member. However, the senior staff member didn’t give us a chance to explain, continuously speaking over us as though dismissing our concerns.
