I wish I could give 4⭐️ but it was more like a 3.5⭐️ The starters were delicious, the Ceviche was phenomenal, the spider crab and the scallop/pork dish were solid. The mock risotto (orzo) was a textural nightmare with unbalanced flavors and the "raviolo" was visually pleasing, very clever in context, but that's all there is to it. The mango/pineapple foam (forgot to take a pic) tasted great, but the dish does more damage than good to the ingredients. Lastly the pistachio trilogy is in dire need of some crunch, we had much higher hopes for this dish. They had a great selection wines, one of which their knowledgeable sommelier helped pick out. Unfortunately he was the highlight of the service, as our waitress was rather unenthusiastic (and didn't speak english, which I didn't mind, but might be an issue for some) Keep in mind, that weekends are tasting menu only, and I'm not sure if it's indicated anywhere on their website. Overall food is good value for money, but rather...

Hemos estado hoy mismo, y todo ha ido mal desde el principio.

Hemos llegado, y se habían equivocado al pasar la reserva del ordenador al cuaderno, apuntando 2 en lugar de 4. Después de un rato esperando y ver cómo intentaban meter a 4 en una mesa de dos, al final ha venido la camarera y nos ha dicho que quedaba una mesa de tres libre y que había sido error de su jefa, no de ella...ok, nos sentamos, aunque pegados a la puerta, lo que hace que cada vez que alguien entre o salga, haya corriente.

Faltaba, lógicamente, todo lo necesario del cuarto comensal. Cuando han traído la carta, lo hemos señalado. Han traído el plato, pero nada más. Pedimos una jarra de agua y un vino, y se equivocan y traen agua que abren delante nuestro. Le reclamo el vaso, que me trae después.... Pero sin cubiertos ni servilleta, siendo necesaria otra reclamación.

Ya, cuando tenemos las cartas, preguntamos por los menús degustación... Nos dicen que tenemos 4 minutos para decidirnos y que nos los trae ahora (¿En serio? Después del tiempo que nos habéis hecho perder, tenemos 4 minutos para leer dos menús que no habéis traído?)... optamos por carta.

Aquí ya, la calidad de la comida: todo MUY MUY MUY salado. Para los 4 comensales, y todos comemos con sal de normal. Las calidad de los platos, si pasas por alto lo de la sal, justita. Muy bonito, muy instagrameable, pero calidad justita. 70 euros persona por:

-4 euros una racion de pan (4 rebanadas!? De verdad??!!). Hemos pedido una para los 4, no por el precio, por lo triste. 4 abrebocas(2 unidades por abreboca). Nos dicen que no pueden partir en 4... Como? Si vienen 2 unidades? No puedes partir un precio por la mitad? Ok, pedimos uno para cada uno. 26 euros cada 4, es decir, 6.50 el pintxo. 2 pintxos persona,52 euros. -tiradito de salmón: salmón en lavas arruinado por la sal y el limón que llevaba el plato eso sí, muy bonito. -ceviche waman de lubina. Podría ser lubina o cualquier otra cosa, mala calidad del producto. Mil veces mejor cevichef en Bilbao. -arroz: rico -ravioli de buey: no esperéis ravioli. Es un gusto de carne asada con una tira de pasta de colores encima, correcto, pero un gusto de carne. -pulpo antioqueño: A QUIÉN SE LE OCURRE MEZCLARLO CON SALA DE COCHINILLO Y NO PONERLO EN LA CARTA?? No decimos nada porque estamos muy quemados, pero no nos gustaba el cochinillo, no entendemos porque aparecen ingredientes que no están detallados en algo tan inevitable como una salsa. Los trozos más pequeños del pulpo, secos. -mollejas: mal cocinadas. Demasiado cocidas por fuera, sin hacer por dentro.

Hemos probado 4 postres, y no digo nada porque no estaban mal, es más tema de gustos. Moraleja, 1 entrante por persona, 1 plato principal, 1 postre y 2 botellas de vino, 70 euros.

No hemos sentido que la calidad ni el servicio...

I believe this establishment is deserving of a Michelin star, and I hope they achieve this recognition in the upcoming years. The interior has a clean, modern, and inviting design, somewhat reminiscent of Japanese aesthetics. The dishes are skillfully presented, highly photogenic, and come in well-proportioned servings that are not only visually appealing but also delicious. Having sampled a significant portion of their menu, the unanimous favorite was the octopus dish, which featured wonderfully tender and succulent pieces paired with a perfectly complementary sauce. The pork dish also stood out with its delightful crispiness and rich flavor. Among the desserts, I recommend trying the one featuring caviar and gold leaf, as it offers a unique and delightful experience. The prices are reasonable considering the quality and presentation...

So glad we dined here! The thirteen course degustation represented excellent value. Each course was a superbly crafted combination of exquisite flavours and amazingly not a single dish missed the mark. Chef Gabriel Huaman designs complex servings with intricate attention to the detail of flavours, mouth feel and presentation. Each course is a delightful artwork. The restaurant is family owned and sommelier Guillermo is knowledgable and was attentive to our needs. With so many touristy eateries in Bilbao, Waman is a stand out that deserves high praise. Tip: walk over the pedestrian bridge for an excellent view of the photographic Guggenheim.

Happy we found Waman for the one night we had in Bilbao. The restaurant was in a local neighborhood but not too far away from Guggenheim Bilbao. Friendly staff. The crab and the ceviche starters were so delicious and fresh. We could have another round of these two dishes. The sourdough bread with yellow and red pepper butter were tasty. The main course of oxtail pasta and clams with rice like a paella were good but a bit on the salty side. Dessert was yummy. Great local wines and so reasonable for such high quality ingredients.

Happy we found Waman for the one night we had in Bilbao. The restaurant was in a local neighborhood but not too far away from Guggenheim Bilbao. Friendly staff. The crab and the ceviche starters were so delicious and fresh. We could have another round of these two dishes. The sourdough bread with yellow and red pepper butter were tasty.
