Our hotel made a reservation for us, we ate in the upstairs restaurant, not the downstairs tapas/bar. Boy were we happy we did! Upstairs dining room, very elegant/sophisticated service, white table cloths, relaxing, and very adult. Waiters were exceptionally friendly, and had enough English to help us along, plus there was a menu in English to use. Started with the shrimp in garlic oil – exceptional – they bring the sizzling oil to your table and the shrimp actually cooking it while you’re waiting. Had to be careful not to use all the bread to sop up all the bits of oil, garlic, and hot peppers. Next, we had the goat cheese salad with beautiful, leafy greens, walnuts, pinenuts, raisins, and plenty of nice rounds of goat cheese. For the main, we shared a turbot/Rodabollo that came with potatoes and surprise – rounds of octopus. Excellent! Finished with a Tia Maria torte that was Flan with raisins and nuts and whipped cream. Dynamite! Started with a glass —a full one —of Cava and the large pour of a local vermouth. Had a nice Rueda white wine with the meal that was only €14. What a great restaurant! Would...

There is a standing/bar part of the restaurant and another area with table service. Arrived at around 3:30pm for tapas on a Monday in September and wine and it was very busy. The tapas were amazing and their atmosphere was bustling. Get your Google translate app or your Spanish ready though because they don’t speak English - or just point at the menu, which has English translations. I was at the standing bar area and you’d have to shove your way to a server to take your order and there is no queuing system (ie, like if you ordered a drink at a night club/bar/pub). You would stand there forever if you weren’t assertive enough in waving down a server. The servers were the efficient and direct types which were a bit different from the warmer style of other tapa bars I’ve visited on this Camino trip. I enjoyed the experience but would have felt a bit lost when ordering if I didn’t know that was how tapa bars worked. Overall this place is well...

We walked in and we were a pretty large group of like 7 pilgrims, 4 kids. We walked in for a pilgrimage deal but no… no deal? We walked in at 12:50 ish but they rejected our request of their pilgrimage offer flat. Then it was kind of etiquette to each something at this point so we sat down and the waiter really wanted to rip us off. He told us we could buy the 75euro meat platter and he’ll nah that is too expensive so we told him and he went “no no not expensive” LIKE WHO ARE YOU TO JUDGE THAT MR??? Anyway we ate and honestly the most traumatic part was when we asked for water he gave us a bottle of water and obviously we didn’t wanna pay for water so we asked for tap water. He straight out said it cost 3 euros. 3EUROS?!?! Yeah this is a no go place even the bar on the opposite side had better AND cheaper food. Llegué a Casa Pancho por recomendación de varios locales y con algo de suerte, porque ya había terminado el servicio de cocina y solo quedaban los pinchos disponibles en la barra. Pero qué maravilla de barra. A veces uno llega con pocas expectativas por la hora o las circunstancias, y termina viviendo una de las mejores experiencias del viaje. Eso fue lo que me pasó aquí. Desde el primer momento, el ambiente fue acogedor y muy auténtico. La gente que atiende la barra —baristas y camareros por igual— fue amabilísima, con una calidez que no siempre se encuentra en lugares con tanto movimiento. A pesar de que llegué algo tarde, se tomaron el tiempo de explicarme lo que había disponible y de hacerlo con una sonrisa y mucha buena vibra. Se notaba que disfrutan su trabajo y que están orgullosos de lo que ofrecen. Uno de ellos, con toda la convicción del mundo, me dijo: “Tienes que probar la morcilla, es de aquí, de Burgos, y te va a encantar”. Y tenía razón. La morcilla de Burgos en Casa Pancho es un espectáculo: sabrosa, con ese punto especiado y una textura perfecta. Nada de excesos, todo muy equilibrado. Fue una grata sorpresa, y se notaba que detrás había calidad y tradición. Después de eso, no me pude resistir y terminé probando casi toda la barra. Uno tras otro, los pinchos iban superando mis expectativas. Pero si tuviera que recomendar solo dos, serían el cojonudo y la cojonuda: combinaciones sencillas, bien pensadas y con muchísimo sabor. Pan crujiente, ingredientes de calidad y esa mezcla entre lo casero y lo potente que te deja queriendo otro. Cuando ya había comido más de lo que planeaba, me quedé un rato platicando con el equipo de barra. La conversación fue tan agradable como la comida. Es de esos sitios donde no solo vas a comer: vas a vivir una experiencia local, honesta, donde te hacen sentir parte del lugar aunque estés de paso. En resumen, Casa Pancho es uno de esos sitios que se quedan en la memoria. Ya sea que vayas por un almuerzo completo o, como yo, llegues solo a los pinchos, la atención, el sabor y el ambiente hacen que valga totalmente la pena. Recomendado al cien por ciento. Si estás en Burgos, este lugar es parada obligatoria.
