Wonderful treatment by all the staff! Excellent food on the set menu Stratus 1, which is usually only served during the week, but which we were allowed to pre-book for our lunch on Saturday. Not only that, but after finishing our delicious lemon desert, I dared to inquire about their version of my absolute favourite dessert: Tiramisu, which I saw on the midweek menu "N-623". Without hesitation, our attentive waiter was speaking on his earpice-mic and requested a serving to be delivered to our table with all the details required to enable my wife and I to share this additional experience between us - at the same time as our coffees were served . No delay. Really special.
Keeling in mind that Cono Tradición is a family friendly venue, one can expect to share the space with a few lucky young foodies, no surprise there. The two-year(?,) at another table, was in his element and, again, I take my hat off to the serving staff [and his dad] who interacted very well with the little one, keeping his attention and with just the right amount of amusement, to not be a disturbance to anyone.

The room plays it safe — modern with that too-smooth laminated wood trying to whisper “warmth” against the cold concrete. Real wood would have told a better story. But the welcome? Pure Camino spirit. A pilgrim dusty from the trail was treated with the same attentive charm as if he’d strolled in wearing a three-piece suit. Service was outstanding — knowledgeable, human, unpretentious.
The food walks the line between comfort and ambition, mostly staying close to mama’s kitchen. The Canelón de Pularda Asada with trumpet mushrooms and béchamel was a pilgrimage in itself — rich, earthy, balanced, like slipping into a familiar bed after weeks of walking. The albóndiga, though? A letdown. It needed something — a handful of fresh mountain thyme, a punch of rustic life. It sat heavy and silent.
Wine list? Impressive. Spotless cleanliness. Fair prices for the quality and soul behind the plate. Would I go back? Maybe. Would I point your boots toward Cobo Evolución for a little more risk? Read moreIf you feel like you need to break out of daily routines, I highly recommend visiting the wonderful restaurant of Cobo Evolución. The asthetically pleasing design of the restaurant, the lighting, the chosen artwork as well as the pottery and cutlery make you feel like you´re in an Architectural Digest issue. The warm atmosphere sets the tone for what´s to come in the unbelievable diverse Michelin-Star menu based on the Human Evolution. Inspired by the nearby Atapuerca Archaeology Center, the chef Miguel created 7 culinary themes with 26(!) different little dishes, each one inspired by a stage of human evolution. It is more than tough to pick a favourite, with each of the dishes being a precious little masterpiece in itself. We were catered by two very attentive waiters, who were able to explain the whole menu to us in English and made us feel well being taken care of for the whole time we were there. Plus we got a print of our menu to bring home, including the wine we´ve chosen - I was really impressed by this gesture!
