Tried this new place last night, Isabel, our waitress was fabulous, and the food is a breath of fresh air for the Ibiza town restaurant scene.
Food: The Josper-cooked vegetables were delightful, loved the delicate smokiness. The salty potatoes with two sauces showed technical expertise.
The ham platter was of very good quality as was the bread and tomato salsa arrived with it and the fried squid was light and very well seasoned. To summarise, I believe that this place, (along with Bodega by the ramp), possibly offer the price-quality ratio in Ibiza town with this winning because of the execution and lightness of touch. This kind of cooking is unusual in Ibiza which is sadly plagued with overpriced tourist traps that are dated in style or not at all in touch with contemporary cooking techniques or styles. This is what Ibiza needs! Quality speaks for itself, if food is of primary concern, this is unbeatable value.
Atmosphere & Service: The location in the square has a certain feel for outdoor dining, I’d argue an essential experience in the Mediterranean and DILO offers plenty of tables being a corner site. The bespoke interior is of high quality, the tables are large and chairs comfortable, the drinks list better than average (with a decent Spanish brandy available on request) and the staff is of high calibre, knowledgeable but casual. We arrived shortly before midnight when they close and although we received very good service, personally, I would insist that they don’t start clearing the tables & chairs from the square until every last customer has finished eating, but this is a minor criticism.
Overall, a promising high profile opening for Ibiza. Can’t wait to return and become a regular for as long as they keep up...

The evening at Dilo started so well: a lively, atmospheric restaurant in a tree-lined square, outside table, birdsong in the trees, wonderful starter. Then a wait of OVER AN HOUR for the main course. No one checked in with us. No one asked if we wanted another drink. We found ourselves invisible. We noticed that we were not alone in our wait. Couples and families becoming increasingly irate as their food also failed to arrive. Eventually, we found the eye of a waitress. No apology. No explanation. No interest. Even when we explained that one of us was an insulin-dependent diabetic who had taken insulin with the starter and could at any moment have a hypo attack because of the wait. My experience at Dilo was truly shocking. Surly and badly-trained waiters who seemed incapable of the task of organising themselves so that they could provide food to their patrons or caring if the food was late, or caring that their customers were safe. I notice the same comments in many discerning reviews. I genuinely regret having to leave a negative review. I admire the courage needed to open and run any new restaurant in the complex post-Covid climate. But careless and arrogant behaviour such as this will leave Dilo exposed in the competitive and already saturated Ibiza restaurant environment where there are so many excellent alternatives who care about attracting the custom of customers prepared to spend large sums of money on food. Read moreWe went to have dinner, spent 500€, and were treated very poorly. The service was terrible, and one of the staff members even tried to start a fight with my three children. After this experience, I wrote a review, sharing my opinion. In response, the owner accused me of being a “child” with friends, claiming one of us “tried going into the bathroom drugged” while others waited outside. The owner also falsely stated that I wasn’t actually a father and had no children.
This is absolutely untrue for several reasons:
I am not a child. I’m a father simply trying to give my children a nice experience, expecting to enjoy a meal at what I thought was a reputable restaurant.
