We finally had the chance to grab a table at Biang Biang Bar Vallehermoso in the mercado, and it was absolutely worth the wait! The small, focused menu is a delight—it saves you time deciding and ensures everything is done to perfection.

The service was quick and friendly, making the experience even better. We started with two appetizers: the cherry tomato salad in plum juice and the fritas—both fresh and full of flavor. The noodles, though, are the real stars here. We tried one dish with tofu and another with beef, and both were simply delicious—perfectly cooked and bursting with authentic Chinese flavors.

So I came here off the back of watching the second episode of a Netflix documentary about pasta which happened to be about xian cuisine and popularising the famous biang biang noodle in the west. Subconsciously I think my desire for these famous noodles stewed in my mind today. I have to say that they were delicious, as my mother would say they constituted the perfected ratio of give and resistance. Those chewy noodles went down an absolute treat, particularly after the appetite I had built at the calisthenics park.
