I ate here on my first day to Madrid, after a long flight, many hours from my last meal and I’m telling you… my stomach was bursting but my soul kept telling me to eat! We came as a group of 6, not reading anything about this place in advance just that it had good reviews and man what a surprise we had when we heard it had a preset menu. Every dish was a culinary surprise for us, one tastier than the other! The hostess was kind to explain what each dish was. This is where we learned that we actually knew nothing about how a chorizo actually was supposed to taste like, it was just divine! Una experiencia única e inolvidable. Es un restaurante pequeño, tienes que reservar con antelación porque tiene muchas reservas. No dispone de carta, es un menú degustación muy completo y delicioso que te hace viajar por la gastronomía de Cuenca y Albacete. Al llegar a la puerta tienes que llamar con un llamador de los de antaño. Te abre la puerta Mila, es una mujer con una energía impresionante, te trata como si fueses de su familia y te explica todos los platos, que ella misma elabora artesanalmente. El menú se compone de una serie de tapas manchegas, aunque parezca poca cantidad es un menú muy extenso y muy copioso, cuesta llegar al final pero merece la pena. Empezamos con pisto manchego con huevo y unos choricitos, el sabor te retrotrae a los guisos de la abuela; gazpacho pastor, actualmente es un plato desaparecido que solo mantienen ellos, es una delicia que merece la pena probar al menos una vez en la vida; gazpacho manchego, es un plato muy típico de Cuenca, que consta de carne de caza y tortas de pan ácimo, Mila le da un toque delicioso; atascaburras es el siguiente en ser degustado, es un plato muy completo y muy sabroso, que acompañado con nueces y huevo cocido le da un toque delicioso; codornices al chocolate es uno de los platos fuertes, la salsa es muy sabrosa e intensa, está buenísimo, imposible no terminarlo; bacalao con tomate, para mi fue una grata sorpresa, el tomate por supuesto casero, la combinación de sabores era perfecta, nos costó terminarlo pero es casi adictivo. De postre una degustación, miguelitos de la roda con crema pastelera casera, alaju, que es un dulce típico de Cuenca y un dulce de naranja que prepara con cariño Mila,muy parecido al membrillo, todo ello acompañado de queso manchego. Nos invitaron a unos licorcitos, hierbas, orujo y resoli, yo me decante por resoli que me recuerda a mis tiempos mozos por los pueblecitos de Cuenca. Para terminar me tomé un café de puchero que hacía tiempo que no probaba. Casi secuestramos a Mila para llevarnos la a casa. Volveremos a probar las gachas y el arroz con liebre. Se me olvidaba mencionar que después de atascaburras nos sirvieron uno de los mejores morteruelos que me he comido en mi vida, 12 horas de elaboración que se notan en...
