So I went with my friends who recommended it. They swore by the food regrettably I I'm allergic to marine life so unfortunately could not partake of their Marine dishes but my friends say that it is incredible.
Now for what I can critique from what I actually was able to have I was a little bit shocked to say the least of the restaurant being rated with a Michelin star 3 years running with such bad service. I have read several of the different comments and it seems like everyone mostly is having the same problem with the service being atrocious. After arriving later than my friends to the local for dinner I literally tried for a good 25 minutes to ask for a drink while they prepared a table for us outside and was never attended. Then when the table was ready we had to wait another 30 minutes for them to attend us in taking our orders and the drinks took another 15 minutes to bring to us making it a total of an hour and 10 minutes before I was even served. It's not that the waiters seemed upset like other comments but they definitely were distracted and or attending what looked like regulars since they stopped to chit chat with several that arrived after us. Now after taking our order it did take also a while for food to get to the table and it only came out one dish at a time that were sharing dishes until our last dishes that were duck and pork. There's a clear lack of interest from the waiters towards anybody who is not a regular. Also the table we were placed in was just in front of the door which released the hot air being tossed out by their air conditioner right onto US heating up everybody at the table. It's unfortunate because the food that I did have was pretty tasty.
Now we had the oxtail dumpling which I've never liked oxtail but I always give new food a chance before saying no and oh my God it was delicious. We are the steak tartar and it was quite delicious as well with a little kick of spice. We also got the duck breast with ginger and the pork shoulder with yuzu and it was divine. Lastly being that I was Peruvian my friends said we should get ají de gallina, being as this is my favorite dish from my home country it was super upsetting to realize that it was not good and super watery with a sauce that barely tasted like aji. It's not that hard to make and it's very hard to mess up so it was upsetting to say the least being as they were considered Michelin star.
All in all I would say the experience was underwhelming for a Michelin star restaurant. The food was pretty good very small portions compared to other places for the same price but the service was atrocious. Being that I have worked in restaurants and managed some very popular restaurants it is surprising to read in many comments throughout all these reviews stating the same and the restaurant basically not doing anything to fix it.
One can only hope that they fix the problem they're having and hopefully get some help with one of the most famous dishes...

For dessert, we ordered the chocolate textures, which was like a chocolate lava cake. It was good, but it was very heavy. We swapped out the pistachio ice cream for the violet ice cream. The violet ice cream was horrible. It tasted like soap, and I really wouldn’t recommend it. Overall, the food at SISAPO was good, but I recommend ordered more appetizers because they were much better. Service: ⭐️ I would give 0 stars for the service if I could. I have never received such horrible service for this nice of a restaurant. I think I have received better service from a McDonalds. As soon as we entered the restaurant, the bartender (not sure of his name but he had a mustache and a silver earring) had a huge attitude. When we were seated, no one explained to us that the menu was online. The menu is very confusing because there is a place to add the food to a cart but you have to tell a waiter your order. When we signaled to the waiters (as we didn’t have a specially assigned waiter), they took the drink order of one person in our group and left. They didn’t ask what the whole party wanted to drink, and we had to signal to the waiter again. They seemed annoyed to take our food orders. They never checked in on us to ask if we wanted more food (and we did!). I noticed they were much friendlier to other people who spoke Spanish. Initially, we were the only patrons, but the restaurant gradually filled. The service was consistently professional and efficient, adding to the overall comfortable atmosphere.
The tasting menu showcased a delightful array of innovative dishes such as: "Flambéed scallop with mango, jalapeño, and miso/yuzu sauce"
"A5 wagyu croquette with parmesan and quince / cuttlefish croquette with aioli and nori seaweed"
"Oxtail shao mai with fried quail egg, sichimi and Timut pepper":
"Aged beef steak tartar with grilled marrow bone" - The steak tartar was excellent, though the bone marrow, while enjoyable, lacked the expected richness and was a bit cumbersome.
"Beef tenderloin with cassava/pumpkin puree": This was the only true disappointment; the tenderloin failed to live up to its name, lacking the expected tenderness.
Our additional à la carte choices further highlighted Sisapo's culinary prowess:
"Lime salad, Balfego red tuna tartar, fried quail eggs and yellow chili" - A bright and zesty dish, showcasing the quality of the tuna.
A notable highlight was the sourdough bread, which surpassed the quality of bread served in the toherMichelin-starred restaurants we've visited.
While the beef tenderloin and the bone marrow were minor setbacks, the overall experience was exceptional. Sisapo delivers excellent value for its quality, offering a moderately upscale dining experience without the pretension.
