Indómito — Restaurant in Santiago de Compostela

We had dinner at Indomito recently, and while the experience had its highlights, it left me somewhat underwhelmed overall.

The restaurant has a "unique" concept where the chef decides your meal instead of ordering from a menu. While this can be exciting for some, I found it limiting and frustrating. It felt odd that there was a menu at all if we couldn't choose our dishes. The food itself was well-prepared with good quality ingredients, but it lacked that WOW factor or surprise element that I look forward to in fine dining. Considering the price point, I expected more in terms of innovation and memorable flavors. While everything was cooked perfectly, nothing stood out as exceptional or particularly memorable. Although the lighting in the restaurant was dim and there were few customers, the service was attentive and professional, contributing positively to the overall dining experience. In short, Indomito offers well-cooked food of good quality, but falls short of delivering a truly memorable dining experience, especially given the lack of choice despite a menu presence. We are passionate about traveling and have experienced many Michelin-starred restaurants in many countries,and this fine dining spot in Santiago truly impressed us! The owner was incredibly warm and welcoming, patiently walking us through the menu and even taking special care of our kids, which we really appreciated. The dishes were creative, beautifully plated, and absolutely delicious. Overall, the experience fully lived up to Michelin standards — we truly hope they receive a star soon! ⭐ Just a small suggestion: we had booked the last seating of the day (having driven in from another town), and while we arrived right on time, the dining experience felt a bit rushed. At one point, one of the dishes was cleared away while I was still finishing it 😅. We understand the staff may have been eager to wrap up for the night, but since this time slot is offered, it would be great to allow guests to savor the full experience without feeling hurried. Tuve la cena mejor de los últimos años en Indómito, y cada plato fue toda una experiencia. Desde los entrantes cremosos y originales, hasta el pescado perfectamente cocinado y los postres artísticos y llenos de sabor, todo superó mis expectativas. La presentación de cada plato fue impresionante, y los sabores estaban perfectamente equilibrados.

1️⃣ El entrante: Un plato cremoso y lleno de texturas perfectas.

2️⃣ El plato principal: Un pescado tierno con una capa crujiente, acompañado de una salsa y guarniciones irresistibles.

3️⃣ El postre: Increíble probamos los Macarons y un helado con mora increíble.

La atmósfera, la atención al detalle y el servicio excepcional hicieron que la experiencia fuera aún más especial. Recomiendo muchísimo Indómito a quienes buscan una experiencia gastronómica única y de alta calidad en Santiago.

I had the best dinner in years at Indómito, and every dish was an experience. The presentation of each dish was stunning, and the flavors were perfectly balanced.
