As an experience - it's one you've got to try in Sevilla if you want a modern but traditional and unique twist on Spanish cuisine. The Chef has insane potential and I would not be surprised to see this place one day get that Michelin star (and hopefully keep the very reasonable prices!)

However, there's a few things that need to be tweaked before then. Our server was clearly very efficient but having just 1 server in a place that offers Set Menus takes the magic away - it almost felt like a race and he unfortunately made a few small errors but if he had help, I'm sure he'd be amazing.

The food itself was amazing quality and the presentation was fabulous (see photos!!!) but we didn't appreciate a couple of choices where it felt like too many elements were on the plate, making the dinner very heavy. For example the truffle on the egg was covered by the super strong stock and so were the potatoes, or the pork belly would have been absolutely delicious even without the egg around.

The main reason for the 4 star was actually the wine pairings. In our humble opinion wine pairings should slowly build up to stronger or fuller wines at the end, however on this occasion we received very good wines but very strong (almost liqueur-like) for aperitif, leaving us overwhelmed by these flavours by the time we received the best wines for main and dessert. This restaurant is special. Every single dish sang with the story of where it had come from. The owner had such passion for cuisine from the Basque country and we learnt so much about local wines too. It's been a long time since I ate a meal where I felt so connected to the land behind the cuisine. Every single dish was a hit, but standouts for me were the egg yolk in foie gras sauce, the duck and the spiced apple crumble. The chef here is incredibly talented, introducing unique flavour combinations while showcasing classic skills. We loved eating here and couldn't stop talking about the food all the way home. The only things I tweak? A couple of this dishes were a bit over salted and I would have loved the lights just a little bit softer for ambience. Neither of these things took away from the overall experience, but the lighting could definitely make the restaurant look as welcoming and special as it is. We had high hopes for this meal but unfortunately we’re left feeling quite disappointed. The starters were the star of the show, however the mains were not up to the same standard with the cod in pil pil sauce being very disappointing. The biggest let down however was the service. We had ordered a bottle of wine which at the end of our meal the waitress poured what we thought would be the last of the wine, however she didn’t pour the entire bottle and took away what was left of it, corked it and put it back in the fridge. We were also not checked on during the meal or asked if we would like dessert or coffee once we finished our mains. Locals were treated differently, so that may be why this restaurant is so highly rated, but I would not be recommending this restaurant to...

Amara es un restaurante donde se come de maravilla a un precio inmejorable pero con un local que no está a la altura del conjunto de la experiencia. Probamos el menú degustación con maridaje, muy completo y muy bien elegidos los vinos. En la foto podéis ver contenido del menú. Es de agradecer que si eres alérgico a algo, te ofrecen alternativas de sustitución. Resulta difícil destacar algo, aunque quizás los entrantes sobresalgan del resto. Especialmente la croqueta de chipirón. Por contra, el tartar de atún me gustó regular porque el sabor del atún se perdía entre el resto. Muy bueno también el bacalao al pilpil y el ajoblanco. Las cantidades son abundantes y acabas francamente lleno. En lo referente al vino, Dulas es una apuesta segura. El rosado me gustó menos y la gran sorpresa fue el Libero 2018, un vino blanco fantástico de Huelva, nada que ver con los del Condado. Cierra el maridaje un moscatel Lustau que también es apuesta segura para los postres. El servicio es amable y eficiente, mantiene el ritmo y te explica tanto los platos como los vinos sin caer en la cursilería habitual. No me gustó que no hubiera mantel. Esta comida se merece un poco más de categoría en lo que se refiere a la puesta en escena en la mesa y el que no haya mantel, en mi opinión, desmerece la experiencia. El principal punto negativo y es por lo que no le doy 5 estrellas, es el local en sí. Es de forma rara, en L, con una parte que tiene pinta de haber sido la entrada a la vivienda, separada del resto por un pórtico. La cocina es abierta y con mesas demasiado cerca. Lo peor es que hay veces que el olor se difunde por el local. No dura mucho, porque la ventilación hace bien su trabajo, pero puede no ser agradable según el plato. Además, las mesas de la entrada están tan cerca de la puerta que como alguien la deje abierta, te comes el ruido y el humo de los coches de la calle Zaragoza. Deberían darle una solución mejor a esa puerta. La decoración del local en su conjunto tampoco es que sea una maravilla. Pero como digo, lo peor de todo (y no tiene solución) es la forma del local en sí. A pesar de todo, espero volver de vez en cuando a probar nuevos platos.

Tried the tasting menu for lunch and it was overall not too bad. Service was friendly and attentive (especially the lady). Some of the dishes were creative, interesting in flavour and presented well (highlighting the chestnut soup, artichoke sherry butter). However I won’t give a five star as some of the dishes were a bit too salty(especially the grilled pork terrine), and I think the menu could be more balanced with fewer dishes on the salty side. I ended up drinking a whole 1L bottle of water by myself. If the price had been a bit lower I might have considered a five star, but at this price level (medium) I have higher expectations.

Probamos el menú degustación con maridaje, muy completo y muy bien elegidos los vinos. En la foto podéis ver contenido del menú.
