Read more5-star steak and 3-star beef tartar. The butcher’s steak was out of this world amazing. It was a comparatively cheap cut recommended by the waitress and it was a great choice. I could never imagine this price steak can give me this much satisfaction. The cut was very lean, and it was cooked between medium rare and blue. I was worried in the beginning that the meat would be too hard, however it offered a soft but chewy texture, and very strong meat flavors. I didn’t even want to eat with the sauce because it would ruin the original flavors of the meat. Do not get me wrong, the green pepper sauce was very flavorful. It really showed the great cooking technique of the chef, because such a lean cut can easily become dry and hard to chew on if not cooked properly. The entrecôte was also pretty good, but in my taste not as fabulous as the butcher’s steak, even thought it doubles the price of the butcher’s steak. The beef tartar however doesn’t match the price, for 320kr I would expect either bigger portion or a very unique recipe. However the taste of the tartar was just Lagom, the sauce was nothing special and I personally prefer less finely chopped pieces. Read moreMy family and I highly recommend Svartengrens. We had a world-class dinner there and we were treated warmly by all of the staff. The cozy, calm atmosphere of the restaurant made it a perfect place for conversation and a relaxing start to our evening.
One of the best things about Svartengrens is that they stand behind their philosophy of sourcing their meat locally. As for the quality, everything about our meal was divine—from the pork ribs which were meaty and perfectly prepared with a delicious smoky-sweet rub, to the salad sides which offered a lovely citrusy complement, to the delicious desserts.
Then there were the cocktails—we were so impressed with the knowledge and creativity of the bartenders. The Old Fashioned with rye was a highlight, as well as the ‘chanterelle’ and the ice cream ‘sandwich’ cocktails.
Special thanks to Karl who surprised us with a little tour of the restaurant! We learned how they dry-age their meat and the positive impact of sourcing from local farms. Then he offered us a sample of their blood-orange sorbet (amazing!)
