Shui Yue Zai is definitely the place to go in Taichung if your looking to have a mid-to-high end Japanese dining experience. It's great for lunch and for dinner, and according to locals, is quite well known around town. They have a few sets to choose from, although none of the dishes are actually listed out. You can make many requests and changes to the menu, as long as it is within the price of the set you chose. Having visited a couple of times before, I've asked to have a dish from the previous time I visited and they actually delivered. 是好友誠心推薦才走進水月齋,原以為只是一次簡單的用餐,沒想到卻成了一場從味覺到心靈都被療癒的體驗。這裡沒有花俏的裝潢,也不靠浮誇的宣傳吸引目光,靠的是一份低調卻紮實的職人精神,以及——靜靜坐鎮在料理台後方、氣場穩定如月的靈魂人物:阿貴師。
先說料理。水月齋的每一道菜都展現出「看似簡單,實則講究」的風格。無論是開胃前菜、刺身拼盤,還是壽司與熟食,處處可見對時令食材的敏銳掌握與細緻處理。阿貴師選材講究但不譁眾取寵,不強調昂貴的名字,而是讓每一種食材在正確的時機發揮最大潛能。
