My initial experience at the restaurant felt a bit weird since the person the desk immediately asked me what I wanted in Chinese. I responded that I didn't know in Chinese, and took a look at the menu, which is only in Chinese and Vietnamese with no pictures, and she responded in English, "There's no English menu."
So keep that in mind to do some research beforehand, but since I wanted to try something new and could read the Chinese part of the menu, I got 綜合腸 (long thap cam in Vietnamese) which is the assorted intestines/organs platter along with 炸春捲 (nem ran), fried spring rolls, and 生小黃瓜 (dua chuot) for extra fresh cucumber.
The fresh cucumber was plentiful, and the fried spring rolls were pretty good, along with the spicy fish sauce.
The intestines and organs platter was plentiful and included some liver, blood sausage, and intestines on a bed of lettuce, basil, and bean sprouts. I loved all the fresh ingredients, and the intestines were particularly well prepared. I've seen so many reviews for this place of people afraid to try the blood sausage, but I thought it was outstanding.
I did feel, though, that the shrimp sauce for the platter was too bland, without much flavor. I was expecting a savory fishy flavor but it didn't add very much.
The dining area is open air with fans so there were flies buzzing around, plus while I was there 5 homeless people walked in begging the diners for money without any staff members doing anything about it. I've never seen that happen in any restaurant in Taiwan before.
Overall, everything was all right, but I'm not sure if it deserves the Michelin bib gourmand recommendation compared to other great restaurants...

I had the Pho Bo Tai, and it was really good and generous. The broth was super fresh with a nice balance of salty and sour—comforting and flavorful.
The Fried Pork Spring Roll was a standout—super tasty and already cut into bite-sized pieces. The pork inside was nicely seasoned.
The Shrimp Spring Roll was pretty good, packed with filling—fresh shrimp, veggies, vermicelli—definitely generous.
The grilled pork, though, was just okay for me. The meat was a bit tough and dry, even though the sauce was actually pretty good.
