一真亭ラーメン Ramen speciality shop
Located nearby to Wuxing Street, which is extremely close to Taipei University Hospital, this humble shop offers an extremely great taste of ramen. If not mistaken, the owner is a Japanese from Kyushu, and one thing for sure is that you can feel the passion of the chef and owner once you entered the shop. Small and humble shop, offers enough spaces for everyone to have a wonderful ramen tasting experience.
The menu offers several types of ramen, and basically the top 3 categories are 赤 (Red, more towards spicy ramen), 白 (White, more to original broth), and 黑 (Black, more towards black sauce). There are other types like Curry ramen, and cold ramen too. If you're craving for a beer to go with the ramen, they have it too! Haha.
Ordered「玉子燒」- Tamago. Delicious and perfect side dishes as starter and to go along with the ramen. Though it's a bit cold, as in, it's served cold instead of hot, but nevertheless still pretty delicious.
Ordered「赤 辣味叉燒麵 + 糖心蛋 + 叉燒」- Spicy Char Siew Pork Ramen + More Half Boiled Egg + More Char Siew Pork! Definitely one of the best Japanese ramen I've ever had in Taiwan. The broth is thick, but not greasy nor oily, making every sip of it is extremely pleasant to the tongue (one of the few ramens where I drank the entire soup! Haha). The noodle (I choose harder texture, my preferences) is having the perfect texture, and soaked well with the broth too. The half boiled egg, ah... my kryptonite, everytime I see a perfectly served half boiled egg, it's a major thumbs up from me. Tender outside with silky runny egg yolk, that's the perfection. Got the spicy tonkatsu ramen with egg ($240 NT) and a side order of fried chicken (5 pieces, $120 NT). The soup was flavorful, the egg was cooked to perfection, and the noodles were nice and chewy (so wish they had thick noodles though).
The owner/workers are overly enthusiastic and extremely welcoming to all customers.
