Preserve's Taipei Dome location is my go-to when eating out due to its convenient proximity to my office. I'm drawn to Preserve because they serve two of my favorite egg dishes: shakshuka and Turkish eggs. While I appreciate the concept of runny yolks, egg whites should never be raw. This is where I consistently encounter an issue.
For the shakshuka, the ordering system now conveniently offers an "eggs fully cooked" option, which I've started selecting to avoid any hassle. Previously, I'd ask for "medium" eggs with a semi-firm yolk, but was told this couldn't be accommodated. So, fully cooked it is for the shakshuka.
The Turkish eggs present a different challenge. When I request medium-poached eggs, the staff's response is that if I don't want a runny yolk, my only option is boiled eggs. As someone who cooks, I know that poached eggs can absolutely achieve a medium to firm yolk with proper timing. Telling a customer that a boiled egg is the sole path to a cooked yolk is simply incorrect, and a boiled egg is fundamentally different from a poached one with a medium yolk. Moreover, even with a fluid yolk, the whites of a poached egg should be set, not liquid.
Unfortunately, despite multiple attempts, the Turkish eggs at Preserve consistently arrive with runny egg whites, which is not only unappealing but also raises concerns about proper preparation.
While I appreciate Preserve as a convenient option, the consistent issues with undercooked egg whites in both the shakshuka and Turkish eggs suggest that perhaps the kitchen could explore alternative approaches to preparing eggs, particularly for these dishes. It's disheartening to be told that a boiled egg is the only solution for a non-runny yolk when it comes to poached eggs.
On a positive note, one aspect I genuinely appreciate about Preserve is their relaxed policy on outside food. It's a huge relief that they don't mind customers bringing in their own food, as I often bring extra veggies to complement my meal. QR scanned menu was difficult to use. Back button resulted in firing the order to kitchen. Thankfully I stopped the order in time or it would’ve doubled the nightmare about to come. Server was so disinterested in all forms of customer engagement and rude. Didn’t even bother to give me a flask of water like all other tables nor helped refill not even once. Restaurant was not busy.
Cinnamon oatmeal bowl - a disgusting attempt to improvise an otherwise classic comfort. The oatmeal was overly dense, tasteless with no traces of cinnamon. Everything was ruined and overshadowed by the peanut butter. Raisins were not properly rehydrated and just sprinkled on top like an afterthought.
Avocado burger - a burger with a bowl of white rice and seaweed was really perplexing. In place of two normal buns they opt for avocado as lid and base with tomato, onion, kiwi and patty. I ended up eating it separately like an avocado salad and meat + rice together.
I gave my feedback on spot and they don’t have anything to respond in terms of food. They explained bad service was due to something personal was bothering the server’s mood today. Read more6/16/2024: Overall, the flavors are good. However, there were a couple of things that needed more attention. We ordered an eggs Benedict marked as "蛋奶素", but it came garnished with spring onions. Thankfully there were able to remake it for us. Still, don’t think this should happen in a veg brunch place. The remade eggs benedict's hollandaise sauce was too watery. The egg itself was also slightly over cooked. An egg was overcooked on the avo plate as well. The oat milk tea is pretty nice but we got a smaller one (same size M & same price & same item) when we revisited 🤔 All servers were kind except one girl with glasses & ponytail. She looked really unhappy and didn’t want to help to find one more knife for us.
