Il est à noter que cet établissement a été ouvert récemment récemment à Taipei mais il y a d'autres établissements de "Wu Pao Chun" à Taichung et à Kaohsiung (la maison mère).

En toute sincérité, cette boulangerie aurait été une boulangerie parisienne, je l'aurais sans hésitation classée dans les meilleures boulangeries de Paris. Mon second passage dans l'établissement de Kaohsiung l'a largement confirmé. En guise de déjeuner, j'ai choisi un produit salé, soit le hot dog, suivi d'un quadruple dessert 😅, c'est-à-dire une tarte citrouille spéciale Halloween, un croissant fourré à la confiture de fruits rouges, un pain au lait fourré à la crème et un melon pan.

Le hot dog, bien que ce ne soit pas le choix le plus intéressant dans une boulangerie pour ma part, était d'un style que j'apprécie bien plus que les quelques uns que j'ai mangé à Paris. J'ai aimé notamment son pain au lait bien moelleux, je trouve que ce style de pain est définitivement le point fort qui me fait craquer de la pâtisserie japonaise à la pâtisserie taïwanaise. Il n'y avait pas pour autant beaucoup de garniture mais le peu était suffisant pour me faire aimer ce hot dog, du bon pain et une bonne saucisse, avec un fromage, heureusement pour moi, pas trop fort en goût. Ce hot dog, c'est ma cam.

Pour la tarte à la citrouille, là, ça devenait intéressant. Je n'avais encore jamais goûté de tarte citrouille, c'était une originalité qui me parlait. De plus, je trouve que les tartes ou tartelettes sont un bon moyen de juger de la qualité d'une boulangerie, ne serait-ce que par la créativité mais surtout par la qualité de la pâte à tarte. Au final, j'ai bien aimé. Moi qui appréhendais le goût de la citrouille dans la tarte, il était léger et agréable. La pâte feuilletée n'est certainement pas la meilleure que j'ai mangée mais elle restait correcte. Par conséquent, c'est surtout la créativité qui m'a paru louable, rien d'incroyable mais pas de faute de goût.

Le croissant fourré, vous l'aurez sans doute deviné, et le produit sur lequel j'en attendais le plus. Moi qui n'ai jamais été pleinement satisfait des croissants en Asie, comparés à ceux de Paris, j'espérais que l'ancien champion du monde relève le niveau de Gontran Cherrier et compagnie. Mea Culpa, j'ai craqué pour la gourmandise plutôt que d'avoir pris un croissant nature comme j'en prends toujours dans les boulangeries, me convainquant que cela ne m'empêchera pas de juger la qualité de la pâte à croissant. Bonne surprise ! Croissant moelleux et surtout parfaitement fermenté comme je n'en avais encore jamais vu en Asie. La qualité du croissant était enfin digne des meilleurs croissants de Paris. Plus tard, je dégusterai le croissant nature de l'établissement de Kaohsiung dont la texture sera encore meilleure...

Le pain au lait, ou briochette, fourré à la crème était dans la continuité des pâtisseries de ce style que j'ai savourées au Japon. Le moelleux, comme je l'attendais, était toujours au top avec une crème, pas aussi marquante qu'une crème pâtissière vanillée ou qu'une crème chiboust en France, mais le minimum requis en accord avec le pain pour en faire une pâtisserie qui se dévore avec beaucoup de plaisir. :)

Enfin, le melon pan, lui, était intéressant. Pour le coup, je n'ai pas été aussi conquis que par le melon pan de "Ginza Kimuraya" à Tokyo. Celui-ci était moins soufflé. Mais il n'était pas intégralement moelleux, il y avait du léger croustillant à l'extérieur. C'était une autre facette du melon pan que je découvrais et qui n'était pas déplaisante pour autant, même s'il ne sera pas inoubliable.

Il faut savoir que si l'on décide de consommer sur place, il faut obligatoirement acheter une boisson en plus. C'est la première fois que je tombais sur une boulangerie avec cette règle et j'ai trouvé cela dommage. Du coup, si ma mémoire est bonne, il s'agissait d'un yogourt à la fraise. C'était rafraîchissant, pas mauvais, mais pas suffisamment sucré pour un Français...

The bakery is famed because of Wu Bao Chun who won the world best baker title in 2010. Now it is more or less passed on to the younger generation of bakers who also managed to crown a few titles back.

The ingredients they use here are best in class, which make their bread very fragrant and healthy. I personally like the individual buns that come with quite a few innovative ideas, such as purple sweet, mango bagels, etc. The world champion series to me is best to be shared on festive occasions. They are rather artisan bread that is localized in ingredients, but the texture remains European, which the locals found rather hard (crust). The outlet is popular among travelera, and bread can be sold out quite fast when groups of them visit.

Prices are getting higher and higher nowadays though, which makes me hesitated. One piece of specialty thick toast would'be cost NTD40. A good treat once in a...

First stop for our #Taiwan food hunt, we visited the famous @WuPaoChunBakery at Xinyi rd, Taipei.

A short intro: Baker Wu Pao-chun found fame when he won the Les Masters de la Boulangerie world-championship held in Paris. He also won second prize in what is considered the Olympics for bread-making, the Coupe Louis Lesaffre, with his Taiwan Longan with Red Wine Bread.

We tried the Nos 1 seller “ Taiwan Spring Salt Brioche” which comprises of Japanese Flour, Egg, Milk, Natural Butter and Fleur De Set and one of the new release “ Persimmon bread” which uses Japanese flour, Butter, Dried Persimmon, Black soybean, Matcha Powder, Almond flour and Egg. Love the taste and texture of both bread and also their attention to details by labeling a food allergens chart at each bread.

Just had the best customer service experience, cookie AND breads of my life. The man who owns this place is so kind, helpful, and really cares about his customers. I felt the love the moment I walked in. Also, holy cow!!! The baked goods are incredible!!!! I’m normally not a sweet food person but the peanut cream bread looked so tempting... just had to go for it and I’m extremely happy with my decision making. If you’re in the area or need desserts for a birthday, baby shower, whatever, this is your spot!!!!!

Just had the best customer service experience, cookie AND breads of my life. The man who owns this place is so kind, helpful, and really cares about his customers. I felt the love the moment I walked in. Also, holy cow!!! The baked goods are incredible!!!!
