They take care to keep the temperature of the water optimal before pouring the pourover, and they make sure to taste the coffee before serving it (poured into a testing cup, not directly from the mug), adding an extra touch of quality control. They clearly take pride in their craft, ensuring every cup is brewed to perfection.
One minor quirk: I was gently reprimanded for squeezing a bag of beans to get a better whiff of their aroma. Apparently, this can shorten the beans' shelf life, according to them. I did a bit of research and confirmed that is not the case. The one-way valve is for the CO2 to escape and for the bag not to rupture. However, oxygen is what causes the beans to spoil, not the lack of CO2. So squeezing the bag doesn't actually make a difference either way. I've stopped in many a time to buy bags of beans to bring home and they truly rank up there. I have had a looot of different third wave coffee beans from around the world, and Peloso truly ranks up there.
