From my experience, coffee shops that cater to a more serious drinking feeling such as yours always serve their coffees unsweetened by default. By more serious, I mean when you offer menus like Piccolo or Dirty, have a barista, or let your customers choose coffee beans. Adding syrup by default is more typical for Thai style coffee we get from cart vendors. I'm not saying you need to give a separate syrup packet when you're unsure but I've seen a few places of the same price range doing it. Anyway if you at least make sure all menus availalbe on all delivery channels have that sweetness option I'm sure the problem is solved.
I'd be ok with characteristic sweetness. This was just downright sugary.

There was soft music playing in the background and a very comfortable welcoming atmosphere. The young woman behind the counter as we learned later was the owner's daughter. I love supporting local establishments over the larger chains.
