Update, on Feb 5, 2022, 2 of us came back for dinner. Still FIVE stars for dining in room staff - all were friendly/welcoming, spoke English well/fluently, and went the extra step to give us an outstanding experience. Food - 4.5 stars: A new dish we tried this time was the pull pork nachos. Overall pretty good, with the appropriate amount of pork, a little lite on the cheese compared to the typical nachos one would have in the US, and the chips are fresh, but on the thin side. We both liked it but not sure we would order it again compared to trying a new dish next time. Unlike the previous time that we absolutely loved the beef brisket, this time around, it was borderline mushy (too too soft) and acted like a sponge for beef fat (lard), in fact, there was a puddle of beef fat under the slices of brisket. We couldn’t eat 1/3 of the portion and mentioned how different it was this time compared to our 1st time there at which we ordered 400gm (this time 200gm). Staff came to explain that the brisket was prepared a little differently than in the US, here it was cooked sous vide (low temp cooking in a plastic bag - so the beef soaks up the fat longer) first before going into the fire pit to be finished off. I can understand how some people would like this, especially those who love beef fat/lard or very oily food, but it was really a turn off for us. Fortunately, they offered to bring us a lil more - we asked for one slice and it was a little less oily. If I were coming back, unless I can be sure the brisket was like the 1st time, I would NOT order brisket here and stick with the pork ribs - still EXCELLENT, tender, lean, hardly any fat on them or fat dripping out when you touch/eat them. Although the brisket was a disappointment for us, those who love beef fat/spongy oily beef would love it. Overall, still probably the best US style BBQ in Bangkok and we would come back (may just avoid the brisket unless we ask about whether it’s lean/oily before ordering). Previous review - 3 of us just had dinner here earlier tonight (2 of us are from California and the 3rd from Taipei). WOW, wow - we had GOOD BBQ in the East Bay (Oakland, Berkeley), such as old and famous Everette & Jones, and Flint’s BBQ, but Rolling Ribs, omg, takes the cake. The taste makes you think you’re at some top BBQ joint in the US, not Thailand. Sure, the others I mentioned are good, but Rolling Ribs - our dinner was borderline perfection - the meat is juicy, tender, falls off the bone. Even the slaw and corn bread were pretty spot on! We were told the owner/chef trained in the US. Our fav was the full order (400gm, about 14oz, almost a pound!) of beef brisket - it was fork tender, and mostly meat, very little fat, very smokey - menu described had been slow cooked for 48hrs! It was delicious as is or with any of the 3 BBQ sauces (original, tangy, and hot) they invite you to try. Next was the dry rub pork ribs - a real Memphis BBQ joint is judged by how it does PORK! This did NOT disappoint- meat was tender, falling off the bone! Knives are provided but definitely not needed. I think these were baby back ribs - very meaty, little fat. We had a full slab and it was worth it! We also ordered a half bbq chicken (organic, how cool is that) - and it was notably good too. BUT, seriously, it’s the brisket and pork ribs that are the real reason to come here! So many other things on the menu to try, such as the pulled pork nachos. You can also get combos of meats for a decent deal. It’s a little pricey, but then you’re getting top cuts of meat, and a lot of it, without having to buy a $1000 tix to fly to Memphis! We’ll be back, it’s a must try if you’re an American style BBQ lover. Finally, our waitress spoke English very well and was very nice/helpful. She definitely made folks feel welcomed.

Revisited the Rolling Ribs Brew Bar and BBQ during my vacation, and once again, they managed to impress me beyond words. During a friendly chat, I mentioned it was my last stop before heading home. To my surprise, the team presented me with a beautifully handcrafted dessert, a delightful gesture that truly elevated the entire experience. It felt like the perfect way to treasure the last moments of my vacation. (Pro tip: While these surprises seem magical, they might not be guaranteed for everyone, especially during peak hours. I was there at 5 pm, so manage your expectations accordingly!) They also had their recent interior upgrade! Moving to new semi-alfresco setup seamlessly blends streetside charm with luxurious air conditioning, effectively blocking out traffic noise. This smart upgrade truly enhances the dining atmosphere. The crew has attended to me this time round are Aum & Meaw, they are amazingly fluent in English, ensuring flawless conversation with guests from all over the world. It appears that the bar sets a high standard by ensuring their staff undergo comprehensive service training, guaranteeing a smooth experience for guests from anywhere in the world. Overall, my visit to Rolling Ribs Brew Bar and BBQ was the undisputed highlight of my holiday. The exceptional hospitality, the unwavering attention to detail, and the dedication of Martin and his team made it an experience I'll never forget. Thank you, Rolling Ribs, from the bottom of my barbecue-loving heart!

Special appreciation goes to the Bar Manager, Martin, for his exceptional leadership and dedication. His commitment to ensuring a seamless experience was evident in every detail, and the genuine small talks in fluent English, including his crew named Hellen and Oil, added a personal touch that truly elevated the overall ambiance. They made their efforts in maintaining impeccable food quality. Everyone took pride in their work, and their sincere body language during interactions reflected a genuine commitment to customer satisfaction. While the food was indeed delightful, as everyone mentions in the review panel, it was the exceptional service that truly captivated my attention. Thank you to the entire team for creating an atmosphere where every detail, from the food quality checks to the small talks, was executed with excellence. It's rare to find such a combination of skill and genuine warmth, and I look forward to future visits to savor both the cuisine and the exceptional service. I am well-treated here. Thank you.
