I don’t usually go back to the same restaurant twice — there are too many places to try. But Moss & Maple is the exception. Their seasonal menu evolves constantly, built around produce at its peak, so every visit feels like a brand-new restaurant… with the warmth of familiar staff, like coming home.
And now to the point: the tomato tart is a revelation. It hits every note at once — sweet, sour, sharp, umami, even a touch of spice. It’s the kind of dish that makes the whole table stop, then break into a chorus of “wow.” When I told Chef Ori it was a winner, he smiled and said he’s soon launching a one-month vegetarian menu. If this is what he can do with a tomato, that menu is going to be something special.
From there, we began an eight-course journey. We started with purple sea-yellowtail paired with sorbet and gazpacho — hot and cold in one bite, an explosion of flavour. We then followed with tuna bresaola, cured like pastrami, bringing together the meaty chew of the fish, crunchy celery and tarragon, and a smooth cherry vinaigrette. Next came a warm trout dish, easing us gently into the meat courses.
The quaqqua duck was a masterclass in umami, its intensity softened by shiitake and lifted by the sweetness of caramelised hazelnuts. Wonderland Farm followed, a bold combination of oyster beef and lamb with black garlic and chocolate miso — strong, deep flavours made harmonious by a pea ragout and chestnut purée. Dessert was a playful nod to apple pie, with sticky pastry, warm spiced apples, and the smoothest homemade ice cream I’ve ever tasted.
What struck me throughout was Chef Ori’s genius for balance. Each dish pushes right to the edge of boldness, yet every component supports another — nothing wasted, nothing extra. The flavours dance, clash, and resolve like music, leaving you excited for the next note.
And still, the tomato tart remains the star. Book a table.
