Did a donut survey today. Bought a plain glazed donut. I had initially asked about donut holes, so the person helping kindly included one of those as well. I like a yeasty donut, and I found the donut hole to be lacking that; it was slightly dry, and there was also an aftertaste that I attributed to too much sugar in the glaze or some kind of extract. So I continued the survey.
When I got home and began to compare donuts, I didn't have near as much of a problem with the full-size donut, but I still didn't like it as much as the others, so I decided to really analyze the experience so I could figure out why.
Because the ratio of glaze to dough is different in the regular donut, the aftertaste wasn't anywhere near as noticable. The texture of Shin's donut was not as fluffy as the other three brands I surveyed today; when I payed attention to how the donut broke down when chewing, I would say there was a kind of toughness to the dough, which would explain why the donut hole was dry. I would suspect the cause is either over-mixing, or the proofing time not being right.

Yes! Yes, yes, yes! Finally found the perfect glazed donut. Perfect ratio of icing to perfectly flavored donut make what a glazed donut should be. Balance.
The best apple fritter I ever had was from Randy's in Los Angeles. Since then, I have searched for something closer to home. I was brought one. I am amazed. I want to stop by and try a fresh one, as it's fair to compare under similar circumstances. But I am very hopeful.
Also sampled the sausage egg pastry as well as the croissant kolache. I nibbled timidly because I can't stand nibbling into cheap ick filled sausage most places use. This was good. Excellent!
Everything was still fresher and better tasting that other places near closing. Can't wait...
