Finally a great pizza food truck right here in Lakeway/Bee Cave. Across from Target and Home Depot Backdraft pizza is situated right on 620S in the food truck park. While this place has only been open a year (in which I've been their #1 fan-- stay back you other pizza ninjas, this is my favorite pizza joint) it's become super popular with locals (and by local I mean Texas locals which unlike other parts of the country are willing to drive 40 mins for good eats), but the owners seem to be taking it in stride with super quick service and a friendly smile. Everything is fresh made and artisanal here down to the fresh mozz (made from WI curds), marinara sauce, dough, and hand-pipped sausage-- you get the idea. So if they are sold out of something, don't despair, because everything on their menu is fantastic.
First let's talk about the pizza.... The crust is super thin, but still with a toothsome crunchiness (e.g. Soft and firm, not a crackers). The sausage and mozz are, as I said, made fresh and you can really taste it. No cardboard box cheese flavor here. The eponymous Backdraft is incredible with jalapeños and sausage (they just also added pepperoni because more meat =MEAT!). And you can always customize any pizza you want anyway, so if meat ain't your thang, that's cool too. The sauce is slightly sweet but does not overpower. It's very lightly sauced, so if you're a drencher or Chicago Rat pie lover then this may not be for you, but then again neither is food in my honest opinion :p.
You will pay for using a credit card and taking it out with a box, but the charges are small, 0.35 and 0.25 respectively.
The seating is covered and there are plenty of food options around with the food trailers, but honestly I'm always called away by the smell of this pizza and haven't really tried the others (okay I tried Boss Hog, but we're talking about pizza here now!). Recently I discovered they have gluten free Wednesdays! What a delight!
As to their non-pizza options: I was delighted to see waffles also on the menu. I mean what goes better with pizza and an icie (frozies is here too) than a waffle-- sugar mania!! Unfortunately the waffles are only available on Saturday mornings 9-11am, but they are definitely roadtrip worthy. More like a cake donut, and drizzled with biscoff sauce (or anything you want-- but biscoff is the best.. THE BEST!!), the exterior was crispy from the crystallized cookie glaze, but soft and tender in the center. The texture was doughy (like cake), but never soggy. These are what put waffles on the food map, not that soggy, tasteless crap you find a diners, but real waffles like you find in Belgium and during Christmas markets throughout Europe. Look I've traveled around the world (and I'm not kidding, my butt in seat miles are over 3 million) so I've had pizza in Naples and Waffles in Belgium, but I always look forward to coming home and having a quick stop at Backdraft. Take it from their #1 Fan!!

Read morethis review is based on a Favor delivery Summary: I don’t advise getting this food delivered. I wouldn’t order the chicken wings ever (an issue with my preference for crispy wings, not a quality issue). I want to try the pizza, waffle, and pizza rolls in person.
Pizza had a great flavor, but was very soggy. Google mapped it as a five minute drive, so I don’t know that I can attribute all of the sogginess to the commute (but maybe it was, I don’t know if the Favor driver went the same route as my Google maps is suggesting).
The wings weren’t great because they weren’t crispy at all. That might be more of a preference thing than a quality thing. My husband liked them, but also wants to stick with pizza going forward.
The waffle didn’t travel well either. I was also disappointed in the lack of whipped cream, as the menu stated. Instead I just got two cups of (pretty yummy) strawberries. I checked the “to-go” menu on their website and they advertise the waffles to go with whipped cream, so I assume they have a process for that. It also had a good taste, I think it’s just something you’d want to eat while it’s hot and fresh.
We ordered pizza rolls, but those didn’t show up. Not sure if that’s on BackDraft or on (in) my Favor driver. (That’s a joke about her maybe...

However, I never received a text that my order was ready and when I went outside, the lights were on and it was their open hours, but no one was inside the food truck. There were other customers that had the same thing and all of us were waiting for the food that we had ordered ready. You were supposed to receive a text. Text whenever it was.. I tried calling an no one answered it just went straight to voicemail. I tried messaging on their Instagram account since the phone wasn’t working to let them know That I ordered online and had been charged, but there was no one in the food truck, even though it was their business hours and there Website took my order. It’s now over a day later I still have not been able to get a hold of anyone at backdraft pizzeria however I was charged for the pizza and my order which I never received. I am now still trying to figure out what even happened. There were other customers there that had the same problem as me, and none of us could get a hold of any of the employees or manager online or via the phone while we were waiting for our food which never came. Zero stars for customer service obviously no food so zero...
