Ah! Chihuahua Taco Truck — Restaurant in Bellingham

Wanted to try another Mexican food truck in Bellingham and unfortunately the Chihuahua Taco Truck did not meet the mark. Ordered a carnitas burrito with cheese and extra salsa. Was told the extra salsa would cost extra. No worries, and proceeded with the order. Upon opening my plastic bag, my burrito only had two salsa plastic caps (I didn't receive the extras that I paid for, I should have checked). My first bite was a wonderful experience of shredded lettuce, it wasn't until my third attempt when I discovered the carnitas (no cheese), my second thru 5th attempt was intermittent chewy fat..

Trackside is an awesome venue and the guys in the truck were friendly, but both of my girls became ill after having the chicken tacos. I had a burrito that was average. If there was any bacteria in my burrito I think the one beer I had killed it, as I also didn’t feel great the next day, but not as bad as my poor daughters. There are many options at Trackside, but I recommend eating ahead of time, especially if you have a fear of yellow jackets. We were there there in late August and they swarmed my girls as soon as they got their tacos and they had to eat in the car. Local food truck at Kulshan Brewery. (They've moved to different locations during the past few years.) The food is delicious, fresh, hot, and made to order. For years, this has been our favorite food truck in Bellingham. Our favorite orders include burritos, tacos, taco salads, and nachos.
