From the moment we stepped into Shinsei, we were embraced by an atmosphere of warmth and attentiveness but nothing could have prepared us for the divine experience that is Ryan. To simply call him a server would be an injustice. Ryan is a curator of comfort, an artist of ambiance, and without question, one of the most strikingly handsome and beautiful individual to ever walk a dining floor. His care for our table was unmatched, thoughtful, graceful, and perfect. It was as if he anticipated our needs before we even knew them ourselves. Every detail, from his eloquent menu recommendations to his genuinely kind demeanor, elevated our evening into something unforgettable. The food was simply to die for. Always amazing service and food for an affordable price, not super expensive like some other restaurants with similar or even lower quality!! The menu has such a huge variety of options, from sushi to noodles to bento to unique entrees like fish cheek! I especially love indulging in the mochi ice cream after dinner. In addition, the owners are an immigrant family from Korea that our family has had the pleasure of personally knowing, and let me just say -- these are some of the most hardworking and kind people ever! It definitely feels good to support local business owners, especially because the food is amazing as well. The location is great for a date, but reservations for large groups can also easily be arranged; although it's always quite busy at the restaurant you get seated fairly quickly. In my best opinion this is the best place in bend for sushi they have had a lot of trile by fire over the 3 and half years I have been taking my wife the biggest problem they they have overcome was cutting size and packing the consistency was nun but after several attempts to help they had to learn on there own.

Everyone will have a different experience I have been going to shinsei since it opened and it's not ways absolutely amazing but most of the time it is you can't be to pickie when there aren't to many sushi restaurants in bend currently I will always go back tell I get food poisoning then your black listed...

don't ever assume that your customer need you to tell them how to eat sushi unless they ask and assuming the customer doesn't understand What soy sauce is and how one is low sodium It's completely unnecessary and kind of unprofessional, Assume...

Eat here! I eat sushi all over the world, especially when in Japan of course. I loved it, ordered the sashimi combo with hot sake for lunch before a 9hr flight ($50 after tip, well worth it). Thick quality cuts of Ahi, Salmon and Yellow tail garnished with shredded daikon, lemon and pickled sprigs. The rice was the perfect quality and texture, not your average US enriched budget rice. Typical wasabi for the US which I do enjoy however, real fresh wasabi root is something most people will never taste in their lifetime anyway so no worries, it's delicious. This place is quality. I have no problem with the atmosphere at all it was clean and decorated nicely just wasn't anything outstandingly extraordinary.

Ate here for dinner today and I will not be back. My fiancĂ© and I got miso soup, mixed tempura, spider roll, and Las Vegas roll. Our mixed tempura was poorly cooked, the green beans were burnt, the squash was under cooked and hard. The tempura batter was also thick and soggy when it should be crispy. The tempura battered soft shell crab in my spider roll was ice cold I couldn’t even swallow it. The sushi rice was hard in both our rolls. Everything here was edible but not good by any means. The only good thing here was the service and the only reason for the two stars.

Definitely the go-to for sushi in Bend. Amazing miso soups (we had traditional, surprisingly good for $3, and the crab miso which came with a whole soft shell deep fried crab; also has delicious lil mushrooms throughout and well flavored seaweed). Nigiri was fresh and well sized for the price, and the eagle _____ roll is easily the best roll I've ever had. Spider roll was also the best I've had anywhere. All rolls were reasonably priced. Staff was friendly and quick, and the atmosphere was clean and attractive. Definitely recommend!
