Really nice spot. My husband and I went here on a date and we sat outside on the front patio. The service was quick, friendly, and attentive. The inside had good modern vibes and the music was great. Our food came out hot and quick, especially for a Saturday evening. We had the Plato potatoes and spicy goat cheese crostini to start. Both were full of flavor and absolutely delicious. Some of the best fries I’ve ever had. For our mains, I had the republica chopped salad with chicken - the dates and walnuts paired with goat cheese were super tasty. Next time I order this I think I’ll ask for no corn, it didn’t seem to go with for my pallet. My husband had the village burger. We try bites of each other’s meals when we go out and it was absolutely delicious. If you like lamb this is a must. The only thing not pictured is the coffee, which might just be my new favorite. I ordered a cup and our waitress brought it out in a stainless steel French press. I may have to get one of these for myself. The coffee was brewed to perfection, so smooth, not cheap tasting like you’d normally get at a restaurant, and best of all, it stayed hot in that French press. I purchased a bag of the coffee on my way out. There’s only one reason I’m giving four stars; because of the outdoor atmosphere being along the busy street. Adding some tall plants or trees against the fence would make a big difference. Although that’s not to say we won’t be back and sit outside. It was still lovely with the string lights. This is a great spot for a date, meeting up with friends, coming as a family, or even a solo lunch or dinner. We’ll definitely be back.

[Following message was shared directly with restaurant on their website...] Hey! This is Griffin. I visited you all for the first time yesterday for carryout (after we lost power at my home). I had to let you know how my food was... I ordered the Beet & Arugula Salad -- minus blue cheese, and with a Beet Burger added atop it; and the Beet Burger with Fries. My disappointment is with your Beet Burger. It tasted like "nothing"; no seasoning was detected -- like garlic powder (which I added to mine after I got home). Additionally, the burger on the bun was OVERcooked, and the burger on the salad was UNDERcooked! My tastebuds were so confused, and overall I was so disappointed after having spent $39. (I am extra regretful at having paid an extra $6 for a Beet Burger Patty that I did not eat.) What is your Beet Burger made from? It tastes/ed REALLY bad; like -- I haven't tasted anything that bland and horrible in many years of being plant-based. : ( This is just some feedback for you and your kitchen. Please consider changing this item somehow. A little bit of garlic powder offers much forgiveness for an otherwise blah food. Thank you for this consideration. If you should choose to respond to any of this memo, please reach out to me on mobile number [removed]; or via email at [removed]. Gracias.

Food ok, bartender snappy. I was on my way home from work and I was treating us to a to-go meal. I remembered this spot. I ordered chicken fingers and fries and the BLT pasta- was going to split everything with the whole family. The bartender very quickly said "OK, I'll let you order the kids chicken and fries this time. Another server might not next time." She just assumed it was for me. I felt that was rude. I asked for the chicken to be fried. When I got home, we were all hungry and ready to eat. I opened the boxes and I was disappointed. Only 1 of the chicken fingers was fried. They were both dry and bland. The BLT pasta bacon was too salty and overcooked. The last time I ate it, 0 complaints. Quality going down in food. If I go back, I hope everything goes better. The host was quite sweet, and the restaurant was clean. At least they have some standards.

Disappointing Experience – Would Not Return

We visited Republica on a Sunday afternoon around 2:30 PM with a group of 7. The restaurant was nearly empty, with only one other party inside, yet we stood at the entrance for about 10 minutes before anyone greeted or seated us.

Once seated, we were served room-temperature tap water in glasses without ice. Our server took our orders but forgot several items, which had to be corrected later. The menu was very limited, the food was underwhelming in both taste and quality, and the prices did not reflect the value received.

When the check came, we asked for it to be split and were told they could only split the bill three ways for parties, something that would’ve been helpful to know upfront. Additionally, a 20% gratuity was automatically added to each check, which felt presumptive given the service level.

To top it off, one guest paid with cash and was not given her $16 in change until we had to ask for it, no indication was given that the change would be kept or returned.

Overall, the experience fell far below expectations. Poor service, mediocre food, confusing policies, and a lack of attentiveness from staff. We won’t be coming back and would not recommend...
