I just came here on May 3rd 2025. Rio Mambo used to be one of my favorite places. Straight to the point. We came for a bachelorette party so there was 8 of us. I understand we’re a big-ish group however our drinks were always empty and it would take at least 15 minutes to get another after multiple attempts to wave our waitress down. We had to ask the hostesses and manager to help us get water, soda etc. Our waitress was incredibly RUDE, condescending and unprofessional. Our fajitas came out without ANY sides and she tried to tell us that cheese, guacamole, tortillas, etc doesn’t come with the fajitas. When we asked for these things she brought out cheese and tortillas only 15 later after our food was cold. We asked that she reheat our food or replace it and she rudely remarked “or you can eat it cold”. Towards the end I ordered my 2nd alcoholic beverage and 30 minutes later we were done eating and ready to go I still didn’t have it. The checks took 35-40 minutes to receive due to the fact she never came back to check on us. We tried to wave her down 5 times.. needless to say she needs to find a different job and managers need to correct this. I wish I would have got her name but we barely saw her and when we did wave her down she was gone right after asking for what we needed. We did let a manager know that she was barely checking on our table and right in front of us he talked to her for a brief minute. At least it was far enough away we couldn’t hear but close enough it was very awkward. Drinks are overpriced and food is subpar. Not worth this...

My rating is mostly based on the food. Our waitress was very nice. The decor was interesting, a lot going on, but when I saw tape holding the ripped material on the booth seats together...its little things like that that make me question everything! Its super tacky. When it came to the food, I asked for what I thought was a simple substitute and for some reason they seemed to be confused about how to prepare it. Spinach and Shrimp enchiladas is a very popular option at many Mexican and Tex-Mex restaurants. I ordered the shrimp enchilada and requested to add spinach, OR, if it was easier, I'd order the chicken and spinach enchilada and substitute the chicken for shrimp. I didn't think this was a difficult request because they clearly have both ingredients, but the waitress had to ask if they could fulfill my request and they eventually did, but instead of leaving the shrimp whole, they cut it up in 1/3's...weird. The meal was supposed to come with Mexican rice, beans and some sort of coleslaw. They left my beans off the plate and I had to ask for them; the rice and coleslaw were bland and terrible. The entire meal was very underwhelming. We spent over $60 on 1 appetizer (odd chunky queso), 1 frozen margherita, and 2 entrees. I really wanted to like this place but unfortunately I cannot...

It was very easy to pull off I-35 and arrive in time for Saturday lunch. Their lunch menu is good all week, unlike many others that only have a weekday lunch menu.
First impression, lovely surroundings! (Even the woman's restroom is glamorous!) The designer also made very good use of lighting.
The parking lot is big and there were plenty of open parking spaces. The restaurant was busy but not packed, so we were quickly seated and chips and salsa came right after. The chips are thin, just the way I like 'em. My lunch homemade tamale plate came with whole beans in a soupy base sprinkled with fried tortilla chip slivers, which I much prefer to refried beans. I mixed it with the rice, making them both moist and flavorful. Added salsa to my meaty tamales for extra "u-umph."
My husband said his dinner beef enchilada plate needed more sauce and cheese.
Our server came by to see if we needed anything else. Another came by to automatically refill water and check on us. When I asked for a takeout carton and a bag for the chips on our table, our server came back with a container and a fresh bag of sealed chips and salsa!
